These days I only eat roast chicken. Seriously. The best part of this dish is the lemon. It gave the chicken and veggies a nice tangy taste. I can barely think or type today because it’s so hot. It’s 28ºC (82ºF) but feels like 34º(93ºF). I wish you a lovely day. Mine is lethargic!!!!

I seem to get so busy these days so I am always looking for a quick recipe that takes the minimum time possible. I found this on Budget Bytes by Beth. At first, I must say I was very skeptical but then the dinner turned out really great. The best part of this recipe? throw all ingredients into the pot, add the broth, season to taste (I added cumin and Paprika), bring to boil and simmer for twenty minutes. We have been eating lots of roast chicken lately. The main ingredient here is cumin. Please ensure that you buy cumin seeds, roast them and freshly grind them for better results and taste. I added some peas and carrots in the last ten minutes of baking. The weather in my small corner of the world is perfect. I now look forward to walking in the mornings. I roast chicken at least once a week. This time I used freshly roasted and ground spices. You can prepare the chicken in advance and keep it covered in the fridge.
