Rosemary Lemon and Mustard Chicken Drumsticks

My local store sells lots of fairly priced drumsticks or chicken legs. This recipe is really simple. You can adjust it to suit you. I wish you a happy cooking.

Rosemary Lemon and Mustard Chicken Drumsticks

Preparation time: 15 minutes; Baking time: 50-60 minutes; Serves: 4

Ingredients

  • 10-12 chicken drumsticks
  • 2 large carrots cut into half lengthwise and sliced into long portions (optional)

Marinade Ingredients

  • 3 tablespoons olive oil 
  • 4 cloves garlic crushed
  • 2 teaspoons dried rosemary, crushed between fingers
  • 4 tablespoons lemon juice (1 large lemon)
  • 3 tablespoons old fashioned Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper

Instructions

  1. Preheat the oven to 400ºF (200ºC)ten minutes before using. Brush a sturdy baking dish with oil.
  2. Place all marinade ingredients in a small bowl and whisk to combine.
  3. Place the chicken drumsticks in a shallow dish. Drizzle the marinade over and rub in with your hands to evenly coat the top of the chicken and under the skin. Cover with a cling film and marinate 2 hours or overnight, flipping the chicken at least once during marinating. Bring the chicken to room temperature before cooking.
  4. Transfer the chicken and marinade onto the prepared baking dish. Bake in the centre of the oven for 25 minutes then flip and continue baking another 25 minutes or until chicken is done. Baste the chicken in the last 10 minutes at least twice.

Place all marinade ingredients in a small bowl and whisk to combine. (reserve 1-2 tablespoon for basting)
