A stew is a dish of meat and vegetables cooked slowly in liquid and served in the resultant gravy. The tougher cuts like chuck steak, brisket or short ribs are usually used for stews. The beef is generally tossed in cornstarch or flour before it’s seared. Water, stock, wine or beer is used as the cooking liquid, depending on the type of stew being cooked.

In this stew I used broth and wine as the cooking liquid and added carrots, potatoes and red bell pepper. Some people argue that there’s no significant difference between a stew and a soup. Generally stews have less liquid than soups, and are thicker. What you serve with the stew is a matter of personal choice. It can be served with crusty bread, corn bread, mashed potato or rice, with some steamed veggies on the side. If you ever make this stew, please do not omit the wine and it would be nice to add some hot pepper to give it a kick. We enjoyed eating this stew so much.

  • Ingredients
  • 1½ tablespoons extra virgin olive oil
  • 500g (1Ib) stewing beef, diced into bite size pieces ( I used chuck steak)
  • 2 tablespoons all-purpose flour
  • Salt and freshly ground black pepper to taste
  • 1 large onion chopped
  • 2 medium carrots diced (1 cup when diced)
  • 2-3 cloves garlic, crushed
  • 1 cup dry red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon dried chilli flakes
  • 375mls (1½ cups) beef stock (broth)
  • 1 medium potato diced (1 cup when diced)
  • 1 red bell pepper cut into 1-inch squares (1 cup when cut)

Please always assemble all ingredients before you start

Coat the meat with the all-purpose flour, salt and freshly ground pepper in a Ziploc bag. Heat ½ tablespoon oil in a non-stick skillet and brown the meat on oil sides and set aside.

Heat the remaining oil in a heavy based pot over medium heat and add carrots, onion and garlic. Sauté 5-7 minutes until onions are soft.

Add beef, wine, tomato paste, Worcestershire sauce and chilli flakes. Stir, and bring to the boil,

Simmer uncovered 5 minutes until wine is absorbed.

Add stock (broth), bring back to the boil, cover and simmer 1 hour, stirring occasionally.

Add potatoes and bell pepper and simmer 15-20 minutes until potatoes are tender. Check seasoning

sprinkle with fresh herbs and serve with your favourite carbohydrate.

Preparation time: 30 minutes; Cooking time: 1½ hours; Serves: 4

  5. Add potatoes and bell pepper and simmer 15-20 minutes until potatoes are tender. Check seasoning, sprinkle with fresh herbs and serve with your favourite carbohydrate.

    1. We have not had a real summer this year. I’m sitting in the library right now and It’s chilly. Keep on wishing I carried a light jacket. Maybe I should move to Australia. Better weather!
