Simply the Best
My schedule for today says “post” but I’ve had such a long and arduous day, I hardly want to do any posting. Because everything must be done as per schedule (remember those New year Resolutions we made for 2014?). I’ll gladly look for the shortest recipe in my collection, which happens to be “Guacamole”. Its nothing complicated. It’s simple to make, is ready in minutes and a great pleasure to eat. There are thousands of Guacamole recipes out there in the net but this is the one I love. If you ever try to make it, please try and use freshly roasted and crushed cumin seeds. The taste and smell is so different from the ground cumin that has been idling on the shelf for months. I call this a “prepare and taste” recipe. The quantities of ingredients are given but at the end you must taste and adjust to suit your palate. Some of us love lots of lime juice, others prefer hot chilli and others are on a salt free or limited salt diet. Kindly adjust, to suit your palate. I made a resolution to get at least 7 hours of sleep so my dear friends time to visit dreamland. I wish you a good night or a good morning or a good day.
LOL, I wrote this post last night, went to the dashboard and got a shock with the new developments. My computer skills are lopsided, and I wasn’t in the mood of discovering new things at midnight so I shut down and went to sleep. Here I am one day later…frustrated. Why didn’t 1ever study computing skills 101?
- Ingredients
- 3 small avocados (about 600g)
- 1 clove garlic crushed
- 2 tablespoons lime juice
- 60ml (¼ cup) sour cream
- ¼ teaspoon Tabasco sauce or finely chopped chillies or chilli flakes
- 2 teaspoons ground cumin (I used freshly roasted and crushed seeds)
- 2 medium tomatoes peeled, seeded and chopped
- 1 small (about 50g) red Spanish onion finely chopped
- Salt to taste
Please always remember to assemble all ingredients before you start
Mash avocados roughly with a fork (do not over mash). Stir in remaining ingredients. Makes sure it has a little texture. Taste and adjust seasoning to suit your palate.
Oh yes when I started eating, I couldn’t stop. I had a stomach ache by the end of the day…LOL

We are an avid guacamole eating family! I have a lazy way to make it (just combine a fave salsa into some mashed avocados) and one closer to your recipe, but I’ve never added sour cream…hmm, certainly looks good. Same thing happens to me, I just keep on eating it!!

I think I went with sushi, but only because of the avocado in the rolls, which was delicious 🙂
Last night, however, I did mash up some avocados and refried beans, which was also delicious.
I think it’s hard to go wrong with avocado, as long as it hasn’t reached that icky brown smushy stage yet.
Oh yes they are best eaten while still olive green and fresh. I don’t remember when I last ate sushi…I should plan to go out for sushi as soon as the weather improves. Enjoy your weekend!

Looks fresh and yummy! Love it as a sandwich spread with thick slices of tomato, or on homemade bread toasted into breadsticks.

They are small avocados growing in the mountainous area. We don’t see them much lately.

Oh how I love guacamole! I could make a meal out of it. I love that you left some texture of the avocado left. Some throw it in a blender. I much prefer some chunks of that wonderful avocado 🙂
