My Favourite Chicken Recipes

Chicken Fajitas myfavouritepastime.com_2706Today was a rather busy day so we decided to have a very simple and easy to prepare lunch. There has been a lot of chicken sale lately, so chicken was a natural choice for us. We made some fajitas. They tasted so nice I decided to take photos and post the recipe. We served them with some fresh tomato Salsa, black beans and some guacamole. Black beans are high in protein and great accompaniment to light meals because they are also very filling.

  • Ingredients for Marinade
  • Grated rind (zest) of 1 lime
  • 4 tablespoons lime juice
  • 2 tablespoons olive oil 
  • 2 cloves garlic crushed
  • ½-1 teaspoon dried chilli flakes or jalapeno seeded and finely chopped
  • ½ teaspoon dried oregano
  • 1 teaspoon crushed coriander seeds
  • ½ teaspoon ground cumin seeds
  • 2 tablespoons finely chopped coriander leaves (cilantro)
  • Salt and freshly ground pepper to taste

Chicken Fajitas myfavouritepastime.com_3697If the chicken breast is too thick, slice them horizontally, then make 2-4 slits on each piece.

Chicken Fajitas myfavouritepastime.com_3700 Reserve two tablespoons, pour the rest over the chicken and let marinate for several hours in the fridge. Remove from fridge 30 minutes before grilling.

Chicken Fajitas myfavouritepastime.com_3708Heat a griddle pan over the stove. Brush lightly with canola or sunflower oil. Grill chicken over medium heat for 6-8 minutes until the chicken is golden and cooked through. Cover with aluminium foil and set aside.

Chicken Fajitas myfavouritepastime.com_3702Combine the peppers and onion in separate shallow dish and drizzle remaining marinade over them.

Chicken Fajitas myfavouritepastime.com_3715Grill the peppers and onion in the same grill pan over high heat until lightly chargrilled, but still crunchy. Transfer to a serving dish.

Chicken Fajitas myfavouritepastime.com_2701 Warm the tortillas in a microwave or skillet over medium high heat. Cut the chicken into strips and transfer to a serving dish. Set out the chicken, peppers and onion, salsa and guacamole

Chicken Fajitas

Preparation time: 30 minutes + Marinating time; Cooking time: 20 minutes: Makes: 8 Fajitas

Marinade Ingredients

  • Grated rind (zest) of 1 lime

  • 2 cloves garlic crushed
  • ½-1 teaspoon dried chilli flakes or jalapeno seeded and finely chopped
  • ½ teaspoon dried oregano
  • 1 teaspoon crushed coriander seeds
  • ½ teaspoon ground cumin seeds
  • 2 tablespoons finely chopped coriander leaves (cilantro)
  • Salt and freshly ground pepper to taste

Other ingredients

  • 6 chicken breast fillets (1kg (2Ib)
  • 2 large red or yellow bell peppers sliced into ¼” strips
  • 1 small green bell pepper (capsicum) cut into ¼” strips
  • 1 medium red onion sliced into eighths
  • 8 flour tortillas
  • Shredded cheese, salsa, black beans and Guacamole to serve

Instructions

  1. I’ve been missing your regular servings of tasty dishes. But it gave me a chance to dive into your archives. You really have some fabulous recipes here! It has been ages since I made fajitas. I think I go through phases in my go-to dishes. And after a fajita frenzy I went through a fajita free period. But these pictures and ingredient list has got me tempted 🙂

  3. I rarely do fajitas, they just aren’t the same without peppers but I still can’t stand peppers! These look yummy though, especially for hubby who loves peppers.

    1. Ha ha then it’s just not for you. Don’t worry I don’t eat certain things too…we all love peppers like mad…so this is a great choice for everybody!
