My Favourite Chicken Recipes
Today was a rather busy day so we decided to have a very simple and easy to prepare lunch. There has been a lot of chicken sale lately, so chicken was a natural choice for us. We made some fajitas. They tasted so nice I decided to take photos and post the recipe. We served them with some fresh tomato Salsa, black beans and some guacamole. Black beans are high in protein and great accompaniment to light meals because they are also very filling.
The summer holidays are coming to a close by the end of the month. This was one cool, but very busy summer. I hope you enjoyed the summer holidays. I wish you a very happy weekend.
- Ingredients for Marinade
- Grated rind (zest) of 1 lime
- 4 tablespoons lime juice
- 2 tablespoons olive oil
- 2 cloves garlic crushed
- ½-1 teaspoon dried chilli flakes or jalapeno seeded and finely chopped
- ½ teaspoon dried oregano
- 1 teaspoon crushed coriander seeds
- ½ teaspoon ground cumin seeds
- 2 tablespoons finely chopped coriander leaves (cilantro)
- Salt and freshly ground pepper to taste
Marinade Ingredients. Make the salsa and guacamole ahead of time.
Combine all marinade ingredients in a bowl
and whisk to combine.
If the chicken breast is too thick, slice them horizontally, then make 2-4 slits on each piece.
Reserve two tablespoons, pour the rest over the chicken and let marinate for several hours in the fridge. Remove from fridge 30 minutes before grilling.
Heat a griddle pan over the stove. Brush lightly with canola or sunflower oil. Grill chicken over medium heat for 6-8 minutes until the chicken is golden and cooked through. Cover with aluminium foil and set aside.
Combine the peppers and onion in separate shallow dish and drizzle remaining marinade over them.
Grill the peppers and onion in the same grill pan over high heat until lightly chargrilled, but still crunchy. Transfer to a serving dish.
Warm the tortillas in a microwave or skillet over medium high heat. Cut the chicken into strips and transfer to a serving dish. Set out the chicken, peppers and onion, salsa and guacamole
and assemble the fajitas. Enjoy!

I’ve been missing your regular servings of tasty dishes. But it gave me a chance to dive into your archives. You really have some fabulous recipes here! It has been ages since I made fajitas. I think I go through phases in my go-to dishes. And after a fajita frenzy I went through a fajita free period. But these pictures and ingredient list has got me tempted 🙂
Hi Afra
Oh fajitas. I haven’t had some in a while. Did you manage to make them? How is life my dear friend?
Liz
I’d do this with romaine lettuce leaves or maybe Swiss chard, tortillas are loaded with salt. I’m blogging later this week about fish tacos with Swiss chard.
The ones I buy have no salt, at all and since I make from scratch I add the salt myself so no problem whatsoever!

Oh I love chicken fajitas Liz!! Such a healthy weekday lunch I think. Yours look so colorful and yummy!… P.S. Sorry for commenting a bit late on this post, but I haven’t been blogging lately as much!… Hope you’ve had a wonderful weekend 🙂
Don’t worry I was off blogging for almost a month. Now I find it so difficult to sit down and write or chat to everybody. Takes twice the effort. I hope I’ll soon get back to my usual mode. Thanks for liking the fajitas. They tasted extra special. I wish you a fantastic week!

I know what you mean Liz! It does take a lot of time to blog, I’m still trying to update my blog more regularly!… Hope you’re doing well and enjoying autumn in Canada 🙂
Autumn is finally turning into a real autumn, today. I have my hoodie on so it means temperatures are cooling down. I am enjoying cooking as usual, but posting is always another matter. I wish I had someone else to post on my behalf.Have a fabulous week and wish you well with your blog.

Fajitas are a fun dish to make because of all the condiments you can serve with it. Set things out and let people choose what they want and then everyone is happy 🙂
I totally agree. We enjoyed filling them and depositing them in the tummy. It was sad to see the last one go!
