Zucchini is also known as Courgette in Europe.

Zucchini is a long, green cultivar of summer squash, shaped like a cucumber, with a smooth dark to medium green skin, and light yellow flecks. Although botanically classified as a fruit, zucchini is treated like a vegetable.

Zucchini is best harvested before it matures, at 6-8 inches (15-20cm). Avoid large overgrown zucchini.

When shopping: look for firm ones without any blemish on the skin. You can also buy the golden zucchini or the grey ones, which are usually available during summer. The green ones are available all year round but are best during summer.

How to Prepare Zucchini

To prepare zucchini, wash thoroughly and slice off both ends. Do not remove the skin because most of the vitamins are found on the skin. You can grate, dice, chop, slice lengthwise, or into rounds or spears, depending on the recipe you’re preparing.

Zucchini can be eaten raw or cooked. Raw zucchini is either grated, julienned or diced and used in salads or cut lengthwise into spears and used in dips. Raw zucchini is quite bland so make sure you have a well seasoned salad dressing or a really nice and tasty dip to go with it.

Cooked zucchini can be sautéed, shallow or deep fried, stir-fried, steamed, boiled, cooked with other ingredients or baked. The easiest way is to sauté zucchini in a pan with onions and butter or olive oil and use as a side dish

Bake in the oven

Baking in the oven: you can also cut zucchini into rounds or lengthwise, brush with olive oil, season with salt and pepper and bake in the oven at 375º for 20 minutes. Sprinkle with some parmesan cheese in the last 5 minutes of cooking.
