Sautéed Zucchini and Bell Pepper

This is a simple and great way to eat fresh zucchini and bell pepper. Make sure the vegetables get charred and still have a nice crunch. Sauté them just before serving!

Heat 2 tablespoons olive oil in a large pan or skillet and sauté the zucchini and bell pepper over high heat, for 3-8 minutes, or until charred but with a crunch.

Sautéed Zucchini and Bell Pepper

Preparation and Cooking: 15 minutes; Serves: 2-4

Ingredients

  • 2-3 tablespoons olive oil
  • 500g (1 pound) diced yellow and green zucchini (courgette) (3 cups diced)
  • 1 large red bell pepper diced (11½ cups diced)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat 2 tablespoons olive oil in a large 12-inch pan or skillet and sauté the zucchini and bell pepper over high heat, for 3-8 minutes, or until charred but with a crunch.
  2. Season with salt and pepper. Remove with a slotted spoon and set serve immediately.
