Chicken Wings with Green Onions

Make sure you buy good quality ingredients for this recipe. The green onions are a must. They are the key ingredient in this recipe. Do not substitute with red or yellow onions. You may use chives but I prefer green onions.

Wash and pat chicken dry. Season, liberally, with salt and pepper.

Heat the olive oil over high heat in a skillet and brown chicken wings on both sides (6-8 minutes). Remove the chicken and set aside..

Mix all ingredients for the sauce and stir thoroughly to mix. Bring to the boil in the skillet and simmer stirring from time to time for 2 minutes. Add the set aside chicken and bring back to the boil and simmer for 25-30 minutes, turning once (or until chicken is fully cooked). Check seasoning. Add the sliced green onions. Stir to mix

and then serve immediately

Preparation time: 6 minutes; Cooking time: 40 minutes; Serves: 4-6

Ingredients

  • 1.4 kg (3Ib) chicken wings 
  • Freshly ground black pepper and salt
  • 1-2 tablespoons olive oil 
  • 4 stems green onions finely sliced 

Ingredients for the Sauce

  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce 
  • 2 tablespoons hoi sin sauce
  • 300ml (1¼ cup) chicken broth (stock) or water
  • 3 teaspoons cornstarch (cornflour)
  • ½-1 teaspoon dried chilli flakes 

Instructions
