Savoury Zucchini Green Onions and Cheese Bread

Cheese and green onions are a great combination. You can also use chives instead of the green onions. We really enjoyed eating this bread. How is your brand new year? Ours is great, nothing to complain about. I wish you a very happy week!

In a bowl whisk together the flour, sugar, baking powder, baking soda, salt and cayenne or Kashmiri chilli. Add the cheese, zucchini and green onions to the flour and stir to coat evenly. Make a well in the centre. In a separate bowl, whisk together the buttermilk, egg and melted butter. Add the buttermilk mixture to the flour, and gently combine. Do not over mix the batter.

Spoon the batter into the prepared loaf pan. Scatter the extra 2-tablespoons cheese and green onions on top.

Bake 60-80 minutes, or until a toothpick inserted in the centre of the bread comes out clean. (I baked 75 minutes).

Preparation time: 15 minutes; Baking time: 45-50 minutes; Makes: 9 x 5 inch loaf

Ingredients

  • 375g (3 cups, 8.8oz, 2 cups) all-purpose flour
  • 2 tablespoons sugar
  • 3 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • ¼-½ teaspoon cayenne or Kashmiri chilli powder
  • 1 cup buttermilk
  • 2 eggs
  • ¼ cup melted butter or vegetable oil or margarine
  • 1 cup shredded, mature cheddar cheese (I used havarti and cheddar)
  • 1 cup coarsely shredded, zucchini
  • 1-2 tablespoon finely chopped green onions
  • 1 tablespoons grated cheese, extra
  • 1 teaspoon extra chopped green onion

Instructions

  1. Preheat your oven to 325ºF (160ºC). Grease and flour a 9 x 5 inch loaf pan.
  2. In a bowl whisk together the flour, sugar, baking powder, baking soda, salt and cayenne or Kashmiri chilli.
  3. Add the cheese, zucchini and green onions to the flour and stir to coat evenly. Make a well in the centre.
  4. In a separate bowl, whisk together the buttermilk, egg and melted butter. Add the buttermilk mixture to the flour, and gently combine. Do not over mix the batter.
  5.  Spoon the batter into the prepared loaf pan. Scatter the extra 2-tablespoons cheese and green onions on top. Bake 60-80 minutes, or until a toothpick inserted in the centre of the bread comes out clean. (I baked 75 minutes).

Points to Note

  • You can use your favourite cheeses and herbs.
  • For cup measures: spoon the flour into the cup, heaping it up over the top, then slide a knife across the top to level off the extra. Be careful not to shake or tap the cup to settle down the flour or you will have more than you need. I use a 237ml American cup.

    1. I am sitting at table with a large plate of cookies (ahem!) and just had breakfast (fresh rosemary bread). I’m working on eating less, but is it really working…? I have to stop cooking then maybe, I’ll eat less. Glad to hear being self aware is working for you. I wish you the best of 2018. Virtual Hugs!
