Alkalized Unsweetened Cocoa Powder
Dutch-process cocoa powder is made from cocoa (cacao) beans that have been washed with a potassium solution (alkali solution), to neutralize their natural acidity. The alkalization process reduces bitterness and improves solubility and dispersibility which is important for beverage product applications. It also enhances colour and smooths flavour.
Natural cocoa powder is light brown and acidic with a a pH level of 5.1 to 5.4. It must be dissolved in a hot liquid.The processed (alkalized) cocoa powder is darker in colour, ranging from brownish red to nearly black, with a pH from 6.8 to 8.1.
Dutch process cocoa, is also called European style cocoa or Dutched cocoa.or alkalized unsweetened cocoa powder.
