My Favourite Pizza Recipes
This time we had a summer of all seasons. Not too hot, not too cold, quite rainy but generally pleasant. You could cook what you wanted depending on the weather for the day. I spent a lot of time trying different pizza combinations, but I must say my most favourite was this Thai Chicken Pizza, with a thin crust. If you don’t eat peanut butter, then just forget about it, because crunchy peanut butter forms the sauce for the crust. I emptied several jars of crunchy peanut butter.
The pizza is simple: boneless, skinless chicken breast, green (spring) onions and garlic, and julienned red pepper, topped with lots of gooey mozzarella cheese. I suppose you can use yellow or orange pepper but I just love the red colour. I hope you’ll love the pizza the way we did. I wish you a happy Sunday!
Pizza sauce
- ½ cup natural crunchy peanut butter
- 2 teaspoons sugar
- 2 teaspoons rice vinegar
- ½ teaspoon dried chilli flakes (crushed red pepper)
- ½ cup hot water
Chicken Topping
- 1 tablespoon canola oil
- 400g boneless, skinless chicken (add salt and pepper when cooking)
- 4 green (spring) onions thinly sliced (about ½ cup when sliced)
- 2 cloves garlic, crushed
- 1 recipe Thin-Crust Pizza Dough
- 1 large red bell pepper, cut into thin strips (about 1 cup when cut)
- 2 cups shredded mozzarella cheese
- ½ cup chopped fresh cilantro
Please always remember to assemble all ingredients before you start Place the pizza stone in the lowest rack of the oven and heat the oven to 500°F (260°C). If using a pizza pan, heat the oven to 475°F (245°C).
To make the pizza sauce, combine the peanut butter, sugar, vinegar, red pepper and hot water in a small bowl
and whisk to thoroughly to combine. Warm in the microwave for about 30 seconds. Set aside.
Chicken topping: Heat the canola oil over medium high heat, season chicken with salt and pepper and stir fry the for 3-5 minutes until no longer pink. Add the green onions and garlic and cook for 1 minute.
Turn the heat to low and add 2 tablespoons of the pizza sauce.
Mix until the chicken is coated. Remove from heat and set aside.
Roll pizza dough according to dough recipe. Spread the rolled dough with remaining pizza sauce, adding a splash of water if needed to make it spreading consistency. Top with chicken, sweet pepper strips, and cheese. Bake 11-14 minutes in the middle rack until cheese is melted and crust is golden brown. If using pizza stone bake in lowest rack for 8-10 minutes until cheese is melted and crust is golden brown.
Remove from oven, sprinkle with cilantro and cut into 8-10 slices and serve.

Thai Chicken Pizza
Preparation time: 30 minutes + 3 hours rising time; Cooking time: 20 minutes; Makes: 14 inch pizza

- If using a pizza pan, coat a 12-14 inch (30-35cm) pizza pan with non-stick spray or oil. Roll out Dough to a 12-14 inch (30-35cm) circle. Slide into prepared pan. Spread dough with remaining pizza sauce, adding a splash of hot water if needed to make it spreading consistency. Top with chicken, sweet pepper strips, and cheese. Bake 11-14 minutes in the middle rack until cheese is melted and crust starts to brown. Remove from oven, sprinkle with cilantro and cut into 8-10 slices and serve.
- If using pizza stone, roll pizza dough according to a 14-16 inch (35-40cm) circle. Sprinkle a pizza paddle liberally with cornmeal and place rolled dough onto paddle. Spread dough with remaining pizza sauce, adding a splash of hot water if needed to make it spreading consistency. Top with chicken, sweet pepper strips, and cheese. Slide assembled pizza onto pizza hot pizza stone. Bake 8-10 minutes until cheese is melted and crust is golden brown. Remove from oven, sprinkle with cilantro and cut into 8-10 slices and serve.

The boys would absolutely love this!! Peanut butter on a pizza, they would think they died and went to heaven! Ne will have to try this soon. Now that it is slowly cooling off we are back to grilling pizza.
