My Favourite Pasta Recipes
I decided to take a break but I think it wasn’t such a great idea because I can’t seem to get back to the posting mode. What do you normally do when you slip out of the posting routine? Maybe I could borrow a leaf from you. Today I decided to stay put until I get it done, but I have been at it for the last two hours and nothing seems to be working right. It’s such a beautiful day, though. There is soft sunshine and some cool breeze. I wish I was out there daydreaming or just basking in the sun.
Last week our local store had chorizo sausages on sale. As usual, I bought enough to last the fall season. My cooking theme is now “chorizo sausage”. Do you have some great chorizo recipes? Please swing me some my way. Yesterday I made a baguette with chorizo in the middle. It was quite interesting and tasty. Today I made some flat bread with chorizo and sundried tomatoes. Will that weight in the middle ever decrease?? There is lots of carbs and proteins in the diet right now. Perhaps, next week the theme will be “salads without dressings” I hope you are fine. I wish you a happy week, and oh yes, the recipe today is “Pasta with Chorizo Sausage”
- Ingredients
- 500g (1Ib) dried pasta of your choice
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 250g (8oz) Spanish chorizo sausage, sliced
- 2 cups, skinned and chopped tomatoes
- ¼ cup finely shredded basil or parsley (I used basil and thyme)
- Salt and freshly ground pepper to taste
- ½ cup freshly grated Parmesan cheese
Please always remember to assemble all ingredients before you start. Cook pasta in plenty of salted water as per package instructions until al dente. Drain and keep warm.
Fry onions over medium heat until soft.
Add chorizo and cook stirring for about 8-10 minutes.
Stir in tomatoes and cook for 5 minutes until softened. Season if necessary. Add thyme and basil or parsley, and Parmesan cheese, stir to combine. Toss in the pasta

Liz, relax that happens to me too. And the best thing to do is to do nothing!!. I have a very simple side dish chorizo recipe: onions, bottom mushrooms, sliced chorizo, red wine, s&p. Cut onions, mushrooms, chorizo in slices. Saute in olives oil, the chorizo until render the fat, in a separete pan add the mushrooms and onions, s&p, and wine. Mix together. You decide the quantities. Have a happy day!!

You put a lot of pressure on yourself to post frequently! I can get in that mindset, too, but then I remind myself that the pressure is all self-imposed. It’s really just fine to post 2 or 3 times a week, instead of daily! And it’s okay not to post at all for awhile, until it seems like fun again. Anyway, this recipe looks yummy–the pasta ones always grab my attention!

YUM. I can only get Mexican chorizo where I live, unless I order online. But they’re all good, and especially great with pasta!
