Also known as Maine yellow eyes.
Yellow eye bean is a cultivated variety of the common bean, Phaseolus vulgaris along with other bean varieties like black bean, red kidney bean, romano bean, just to mention a few. It is ivory in colour with a brownish yellow patch surrounding the hilum.
The cooked beans are soft and melt in the mouth. The flavour is mild which means you can pair them easily with other ingredients. I buy mine at the bulk barn store in Canada. I have never seen them in regular stores like Walmart or Food Basics. I think you have to buy them in speciality stores.

Cooking Yellow Eye Beans
Two cups dried yellow eye beans will yield five cups cooked beans. Soaked beans will cook in 60-90 minutes.
