What is Tabasco Sauce?

TABASCO® sauce is a trademarked hot spicy sauce made from three simple ingredients: red Tabasco Peppers (African Birds Eye Chilli), salt and vinegar. The pepper belongs to the species Capsicum frutescens.

TABASCO® is made in Avery Island, southern Louisiana by the McIlhenny family since 1868.

The small, exceptionally hot red peppers originated in Tabasco, Mexico and are shaped like christmas tree lights.

They are also said to be shaped like a birds eye and are grown in Africa hence the name African Birds Eye Chilli.

Because they are exceptionally hot, they are also described as the African Devil.

To make the sauce, red hot peppers are soaked with salt and the mixture is left to age for at least three years, then mixed with vinegar and strained before bottling.(The Wellness Encyclopedia of Food and Nutrition).

The sauce is bottled in 57ml (2oz) bottles.
