These cookies were really easy to make. If you ever plan to make them please use granulated sugar with large granules, for tossing. I didn’t have any at hand but next time, I plan to get some. Have a lovely weekend, ahead!
Beat the butter, sugar, vanilla essence, and egg with an electric hand or stand mixer until soft and creamy. Fold in the flour. It will form a soft dough.
Roll rounded teaspoons of mixture into balls. Toss the balls in the sugar-cinnamon mixture.Place the balls about 1½-inch (5cm) apart on prepared sheets. Flatten the balls with a fork.
Bake about 12 minutes or until lightly browned.
Remove from oven and transfer onto a cooling rack.
Sugar ’n’ Spice Cookies
Preparation time: 30 minutes; Baking time: 10-12 minutes; Makes: 25-30 cookies
Ingredients
- 180g (6.5oz, 1½ cups) use half wholewheat and half all-purpose flour
- ¼ teaspoon baking powder
- 2 tablespoons wheat germ
- 125g (4.5oz, 1 stick + 1 tablespoon, 1/2cup) butter or margarine
- ½ teaspoon vanilla essence (extract)
- 75g granulated sugar
- 1 large egg
- For Tossing the Cookies
- 75g (3oz, ⅓ cup + 1 tablespoon) coarse granulated sugar, extra
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Instructions
- Preheat the oven to 350ºF (180ºC) convection ten minutes before using. Line two baking sheets with parchment. set aside. (I used one large baking sheet)
- Sift or whisk the flour, baking powder and wheat germ. Set aside.
- Combine the extra sugar, cinnamon and nutmeg in a large flat plate. Set aside.
