My Favourite Pasta Recipes
I had this pasta a few days ago for lunch and it was really delicious. You can also add some shredded chicken or other kinds of meat if you prefer. I wish you a very pleasant weekend. We have a long one here. I’m not planning to go anywhere. I’ll probably be binge watching shows on Netflix. Sounds like a great idea. Happy Cooking!

Pasta with Capsicum, Arugula and Sun-dried Tomato
Preparation time: 5 minutes; Cooking time: 15 minutes Serves: 4
Ingredients
- 300g (10.5oz) short pasta
- 3-4 tablespoons olive oil
- 6 roasted clove garlics
- 1 large red, orange or yellow bell pepper, diced
- 6-8 sun-dried tomatoes in oil, drained and chopped
- ½-1 teaspoon dried chilli flakes
- 3-4 cups baby arugula
- Salt and freshly ground pepper to taste
- Grated or shaved Parmesan or Pecorino Romano cheese to top
Instructions
- Boil pasta in plenty of salted water as per packet instructions, until al dente. Drain.
- Meanwhile heat olive oil in another pan and add the garlic, bell pepper, sun-dried tomatoes and chilli flakes. Cook for 3-5 minutes. Season with salt and pepper.
- Add the drained pasta and stir to mix. Add arugula and stir briefly until just wilted. Serve immediately, topped with grated or shaved Parmesan or Pecorino Romano.
- Serve as a side with anything you like. I ate mine for lunch.

Hi Liz – for some reason I haven’t been receiving notice of your new posts… so I ‘unfollowed’ you and then ‘followed’ you again… let’s see what happens! Hope all is well with you. I’m off tomorrow to stay with my grandchildren while my son and his wife go to Spain. I see my ortho. doctor today (regarding my broken ankle) and sure hope she tells me I can drive down to PA. I already have my bread machine and other things on my kitchen table in preparation for being away for more than two weeks… Again – I’ll only be gone that long IF I can drive down… and then drive to the Pocono house, where I haven’t been in a long, long time.

Nope – I’m still here… and, as I was typing my other reply I was thinking, “Didn’t I already tell Liz where I am etc.”? My memory isn’t great at the best of times and right now I’m a bit ‘brain-fried’…. no wonder people have kids when they’re young!!
About the ankle – it’s doing very well. I think it’s the tendon that’s going to continue to give me trouble for a good while… which often happens.
At least the ankle is doing well and I hope the tendon heals completely, with time. Healing is faster for kids but takes longer for older people like us. Even losing weight takes longer for us…I’ve been trying to lose weight in vain. I guess it’s just my bad eating habits. I have a binging streak every now and again. I can’t seem to shed it off. I blamed my weight gain on menopause, then blamed it on post-menopause… I was losing a bit since starting on my thyroid meds BUT I’ve been cooking like crazy, as I told you, here in PA and, sadly, I think I probably gained most of it back… ; o (
Ha ha the good thing for me is I am neither loosing nor gaining. It just remains stagnant even though I want it to reduce. I must work harder, but summer is fast approaching and they’ll be lots of BBQ and food…goodness me!
Well… ‘stagnant’ is better than ‘gaining’!! ; o )

Yup – back home! And I’m sooo far behind with my gardening after breaking my ankle and being away for about two weeks. But I worked hard yesterday dividing perennials and weeding in one of the gardens – so I’m getting there. Have a wonderful weekend my friend!! ; o )

Lately I’ve been struggling with lunches. Not sure why, possibly my mind can’t come up with something quick, easy and appetizing. I must say the bright colours of this dish are making my mouth water and I haven’t even had breakfast yet! I’m with you on our long weekend, binge watch something of interest. Netflix is great isn’t it? It has cooled off somewhat here and we are being promised rain by Wednesday. What little bit we have had so far has really done nothing for the soil. Oh yes I’ve been binge watching shows since Friday. I don’t have anything much to do this weekend which is great for a change. My weekends are ever so busy.
