My Favourite Cakes
There are several things you can do with the basic pound cake. In this version, I melted chocolate and swirled it in, before spooning the batter into the pan to bake. Who doesn’t love chocolate? so of course we all enjoyed eating the cake.
- Ingredients
- 450g (1 Ib, 3 cups Australian, 3½ cups American) all-purpose flour
- 4 teaspoons baking powder
- 450g (1 Ib, 16oz, 2¼ cups) sugar
- 450g (1 Ib, 16oz, 4 sticks) unsalted butter
- 8 medium eggs or 7 large eggs
- 50g (2oz, ¼ cup) semi-sweet chocolate, melted over a simmering water or in the microwave and cooled slightly
Please always assemble all ingredients before you start. Grease and flour two 9 x 5 inch loaf pans. I used overhanging parchment.
Sift the flour and baking powder. Set aside. Cream the butter and sugar together until light and fluffy.
Beat in the eggs, one at a time and beat until fully incorporated.

Melt the chocolate over simmering water or in the microwave. Let cool slightly.
using a knife or spatula swirl in with 5 strokes (don’t over-mix)
Transfer to the greased and floured baking pan(s).
Bake 45-50 minutes or until a skewer inserted comes out clean. I baked 50 minutes.
Chocolate Swirl Pound Cake
Preparation time: 30 minutes; Baking time: 50-60 minutes; Makes: two 9 x 5 inch (23 x 13 cm) cakes
Ingredients (Please note you can halve ingredients and make one cake)

- 450g (1 Ib, 16oz, 2¼ cup) sugar
- 450g (1 Ib, 16oz, 4 sticks) unsalted butter
- 8 medium or 7 large eggs
- 50g (2oz, ¼ cup) semi-sweet chocolate, melted over a simmering water or in the microwave and cooled slightly
Instructions
- Grease and flour or line with parchment two 9 x 5 (23 x 13cm) pans. Sift or whisk the flour and baking powder. Set aside. Preheat the oven to 325ºF (160ºC) ten minutes before using.
- Cream the butter and sugar together until light and fluffy.
- Beat in the eggs, one at a time and beat until fully incorporated.
- Gradually fold in the flour.
- Pour the melted chocolate over the batter and using a knife or spatula swirl in with 5 strokes (don’t over-mix).
- Spoon into the prepared pans and bake 45-50 minutes, or until a skewer inserted comes out clean.
- For cup measures:, spoon the flour into the cup, heaping it up over the top, then slide a knife across the top to level off the extra. Be careful not to shake or tap the cup to settle down the flour or you will have more than you need. I use a 240ml American cup.
Points to Note:
- Please note that oven temperatures are given as a guideline only. You may need to add or reduce the suggested temperature depending on your oven. I baked the cake at 325ºF (160ºC) for 50 minutes.
- I halved the recipe and made one 9 x 5 inch cake.
- The idea behind the pound cake is that the eggs, flour and butter should weigh one pound each. 8 large eggs weigh more than one pound.

I love a simple pound cake, Liz. Iced cakes and cupcakes are great but there’s just something about pound cake that I really enjoy. Now you’ve gone and added chocolate to the batter. The simple pound cakes are going to be so jealous. 🙂
