With Ginger and Cilantro
What was your New Year resolution? Mine? eat more veggies. The plan? vegetarian food every lunch time and omnivorous food every dinner. So far? I’ve done great I tell you. I am so proud of myself. Are you still going strong with your 2016 aspirations? please share with me. Have a great week!
- Ingredients
- 30g (2 tablespoons) butter or olive oil
- 1 tablespoon Madras Curry Paste
- 2 tablespoons, finely grated fresh ginger
- 6 spring onions, sliced
- 1 teaspoon chilli flakes
- 1 x 540ml (19 fl oz) canned chickpeas, drained
- ½ cup diced tomatoes (use good quality canned tomatoes)
- 1 teaspoon sugar
- 2-3 tablespoons chopped cilantro
Please always assemble all ingredients before you start
Melt butter or add olive oil to a pan or skillet over medium heat. Reduce the heat and add the curry paste. Cook stirring, for 3 minutes over low heat.
Increase heat to medium, add ginger, spring onions and chilli flakes and cook 3 minutes
Stir in tomatoes and sugar, and cook for 1 minute, then add the chickpeas and simmer gently for 15 minutes, stirring from time to time.
Season with salt and pepper, add coriander and serve.
Spicy Chickpeas
Preparation time: 10 minutes; Cooking time: 25 minutes; Serves: 4 sides

This is definitely something I would eat. I throw things together like this when I’m in a rush and have no exact dinner plans.
This is my lunch…vegetarian every lunch time. It’s really nice!

Would be great for Meatless Monday along with some kind of salad and pita bread. Yup, my men would grumble too but too dang bad. It’s for their own good. -Kat

I commend you on your resolutions and that you have done so well with it! Perhaps it is an awareness we are all beginning to share that animals have as much right to live as do we?? I do not know but I like this chickpea recipe. Such a versatile food! I’d like to send you a recipe my very good friend in Australia gave me, several actually for non meat dips. I’m not an appy and wine person, but with these dips I could soon become one and even forgo dinner. They are chunky dips that I have not seen here and believe me, I’ve looked. One is Roasted pumpkin with cashew and parmesan (my fave) another is red capsicum with feta and cashew chunky dip. Oh and Basil, cashew and parmesan chunky dip – to die for! Congrats to you on your goals, me…eh…but it could be due to a move. We are moving, but staying in Seattle. So, not a big move, but still it interrupts things.That’s my excuse. More veggies though, that seems to be attainable! I’ll have to try.
You have to try..but I do agree, moving no matter, how close, is always such a stressful business. Sometimes we never even get to unpack some boxes for years on end. I wish you a happy moving. Best!
