My Favourite Pasta Recipes
It was time to cook with mascarpone cheese, so I bought myself a huge tub and everything I cooked that week got a good dose of the cheese. Mascarpone is added to enhance the flavour of a dish, without overwhelming the original taste. It’s rich, creamy and buttery so can also be used on bread as a substitute for butter or simply served with fruits.
Please try to use fresh juicy tomatoes for this recipe. Canned tomatoes can also be used, as a last resort. I hope you had a wonderful weekend. Mine was full of homemade pizza. This week was a designated ‘pizza week’ for the blog so I ate tons and tons of flavourful and cheesy pizza. I’ll soon share some of the recipes with you. Enjoy the new week!
- 400g (14oz) pasta
- 2-3 tablespoons olive oil
- 1 medium onion finely chopped
- 2 cloves garlic crushed
- 3 medium tomatoes skinned and chopped (3 cups when chopped) or 540ml (19fl.oz) can diced diced tomatoes
- 125g (½ cup, 4.5oz ) mascarpone cheese
- Salt and freshly ground black pepper to taste
- ½ cup chopped fresh herbs
Please always remember to assemble all ingredients before you start
Heat oil in a pan over medium low heat and gently sauté onions and garlic. Do not brown.
Add chopped tomatoes, bring to the boil and simmer 10 minutes. (You can add a bouillon cube or powder if you like). Meanwhile boil the pasta in plenty of salted water as per packet instructions until almost al dente and, drain thoroughly.
Stir in mascarpone and season to taste.
Toss pasta and fresh herbs in the sauce,
This recipe is simple, but I couldn’t stop eating. It was very delicious!
Pasta in Creamy Tomato Mascarpone Sauce
Preparation time: 20 minutes; Cooking time: 15 minutes; Serves: 4-6
Ingredients

Points to Note:
- I prefer fresh juicy tomatoes like hot-house for this recipe!

I’ve always pronounced Mascarpone with the “e” sound at the end. Is that correct or does it sound a little like Al Capone? LOL. I’m not good with Italian words except vino! Like others, I’ve never tried a pasta sauce made with Mascarpone. Could be the start of a new revolution in the pasta field. It certainly looks wonderful in your picture (as usual) Sometimes I find the really tomato-ie sauces are a little too acidic and give me heartburn so this may be the ticket to alleviating that acidity balancing it off with this cheese. It’s drizzling here. Much needed. However, it’s just clearing the air and nothing drastic. Still….a little coolness and moisture is helping the parched ground and vegetation! Happy hump day!
Frankly speaking Italian is one language I’ve never tried to speak or learn, so I am not good with pronunciations, not even vino. You must try pasta sauce with mascarpone. It tastes extra special, better than whipping cream. This one is really nice because the mascarpone tames the acid and so the tomatoes taste very mild. We have had so much rain, it has become a norm for me! Today was rather cold. I had my hoodie on coz I was doing a bit of gardening. Have a great cruise!

Did it! Had to wait until I had enough tomatoes. This was great! Marscapone was yummy, what a simple and delicious recipe. We added chicken and it was very good!
I am so glad you loved it. We had it two days ago, without chicken, but i think chicken is a great addition. I shall throw in some left over chicken next time. I wish you a wonderful weekend

One question (sorry if this is a stupid question 🙂 When you say skinned tomatoes, does that mean you take the skin off when it’s raw? The only time I have ever skinned a tomato was when I blanched it and then peeled it off.
It’s not a stupid question at all. Maybe I should have said peeled or blanched and peeled. The tomatoes should be ripe. Boil water, dip tomatoes in hot water for a minute or two and then peel off the skin and chop. Heres is a link as well.
