The main ingredients are pasta and mascarpone cheese. Mascarpone is an Italian cheese made from cream. It’s milky coloured and velvety smooth, like rich heavy cream. It has a sweet and lemony taste and a buttery aroma. Mascarpone is one of the main ingredients in tiramisu. Chives and fresh lemon juice are added to enhance the flavour.

  • Ingredients
  • 400g (14oz) short pasta
  • 225g (8oz) mascarpone cheese
  • ¼ cup finely chopped chives
  • 2-3 tablespoons fresh lemon juice
  • Salt and freshly ground pepper to taste

Pasta with Creamy Mascarpone Sauce myfavouritepastime.com_3729Please always assemble ingredients before you start. Cook pasta in plenty of salted water as per package instructions until almost al-dente. Reserve ½ cup cooking water and drain thoroughly.

Pasta with Creamy Mascarpone and Chives

Preparation time: 15 minutes; Cooking time: 30 minutes; Serves: 4-6

Ingredients

  • 400g (14oz) short pasta
  • 225g (8oz) mascarpone cheese
  • ¼ cup finely chopped chives
  • 2-3 tablespoons fresh lemon juice
  • Salt and freshly ground pepper to taste

Instructions

  1. Cook pasta in plenty of salted water as per package instructions until almost al-dente. Reserve ½ cup cooking water and drain thoroughly.
  2. Heat the mascarpone over medium heat, add chives, lemon juice,  a little reserved cooking water and seasoning.
  3. Add the pasta, toss well and serve hot.

    I’ve tasted this with some Gorgonzola (dolce) added, and a sprinkle of chopped walnuts. Very tasty. But, I can’t find that type of Gorgonzola in my little country town!

    1. In texture it’s like North American sour cream. It’s made in one day from fresh cream. As I mentioned in the post It has a sweet and lemony taste and a buttery aroma. The taste is very subtle It’s use more for it’s creaminess! thanks have a great week!
