Every year I end up with numerous cans of crushed or pineapple chunks because they are always on sale. There are several things you can make with canned pineapples. The first I can think of is Hawaiian Pizza. I ate so much Hawaiian pizza when my children were growing up because it was their favourite. I think children love Hawaiian Pizza. Besides the pizza, canned pineapple can be used for fruit or vegetable salad, or sweet and sour pork or vegetables. There are thousands of recipes that call for canned pineapples. I started browsing and but gave up midway. You have to have a good idea of exactly what you’re looking for.

Date and Pineapple Loaf myfavouritepastime.com_1926The recipe I want to share with you is so simple (simple is my magic word, this year). Once you’ve assembled ingredients, the dates, pineapples, butter, and sugar are combined together in a skillet (pan) and heated without boiling until butter is melted. The resulting mixture is boiled uncovered for 3 minutes and set aside to cool to room temperature. Lastly, the flour and eggs are folded in and the mixture is ready to go into the oven. The cake was moist and nice, without too much sugar. I hope you’ll like it too. I wish you a goodnight or good morning wherever you are. Have a pleasant day or night.

  • Ingredients
  • 300g (2 cups, 10.5oz) all-purpose flour
  • 2½ teaspoons baking powder
  • 200g (1 cup full) chopped dates
  • 398g (14floz) can crushed pineapples
  • 125g (½ cup, 4.5oz, 1 stick) butter
  • 125g (½ cup, 4.5oz) sugar
  • 2 eggs lightly beaten

Date and Pineapple Loaf myfavouritepastime.com_1892Combine dates, undrained pineapples, butter and sugar in a saucepan or skillet and stir constantly over heat with out boiling until butter is melted.

Date and Pineapple Loaf myfavouritepastime.com_1906then stir in the second egg and rest of the flour. Pour into prepared pan and bake for about 1¼ hours. Stand in tin, 10 minutes, and then transfer to a cooling rack.

Date and Pineapple Loaf

Preparation time: 20 minutes, Baking time: 1-1¼ hours; Serves: 8-10 slices

Ingredients

  • 300g (2 cups, 10.5oz) all-purpose flour
  • 2½ teaspoons baking powder
  • 200g (1 cup full) chopped dates
  • 398g (14floz) can crushed pineapples
  • 125g (½ cup, 4.5oz, 1 stick) butter
  • 125g (½ cup) sugar
  • 2 eggs lightly beaten

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or spray a 9 x 5 inches (23 x 13cm) loaf pan (tin) and line base with parchment (greaseproof paper). Sift the flour and baking powder and set aside.
  2. Combine dates, undrained pineapples, butter and sugar in a saucepan or skillet and stir constantly over heat with out boiling until butter is melted. Bring to the boil, reduce heat and simmer uncovered 3 minutes without stirring. Cool to room temperature.
  3. Stir in one egg, and half the sifted flour until just mixed, then stir in the second egg and rest of the flour. Pour into prepared pan and bake for about 1¼ hours. Stand in tin, 10 minutes, and then transfer to a cooling rack.

Point to Note:

  1. You may need to add or reduce the suggested temperature depending on your oven. I baked the loaf at 350°F (175°C) for 1 hour 5 minutes.
  2. The loaf is not too sugary.

  4. This sounds great. I absolutely love pineapple! Hmm, my kids never have had a Hawaiian pizza. They love pineapple so may enjoy it, might have to try that sometime.

  6. Hahaha, funny that you mention Hawaiian pizza!! I was the same as a child. It was my absolute favourite and I think my mother got sick of it very quickly… now I haven’t had one for years 🙂 This cake on the other hand, looks divine. So moist and packed with fruit. Definitely a great way to use your stockpiled pineapple!

  7. That looks seriously delicious and I can hardly believe how easy – one pan and a wooden spoon – brilliant! Tinned pineapples are something I rarely buy despite Hawaiian pizzas being coveted in this house too but a tin has gone on my shopping list after reading this post!
