Golden Zucchini is a long, golden yellow cultivar of zucchini, with a smooth yellow skin, and a dark green stem. Its flavour is sweeter than that of green zucchini and it’s also classified as a summer squash.
Although botanically classified as a fruit, golden zucchini is also treated like a vegetable and is best harvested before it matures, at 6-8 inches (15-20cm). Avoid large overgrown golden zucchinis.
When shopping look for firm ones with smooth shiny skin and without any blemishes.
Golden zucchini is most plentiful from May to October like all summer squashes.
That is exactly what our neighbors gave us the other week that we have had so much fun cooking in a variety of very different ways! What an incredible squash Golden Zucchini is!
I have lots of grey and green zucchini in my fridge right now. I love making pasta with zucchini. Have a great week
