This is a very easy and quick dessert. Please make sure you buy a good quality and fruity jam. You can also use homemade jam. Any flavour will do. I wish you a happy Easter Weekend!
Easy Jam Tart
Preparation time: 20 minutes; Baking time: 30-35 minutes; Makes: 1 x 9-inch (23cm) tart
Ingredients
- 250g (2 cups) all purpose flour
- 1 teaspoon baking powder
- 100g (½ cup) sugar
- 1 egg and 1 yolk beaten
- 125g (8 tbsp, 1 stick + 1 tbsp, ½ cup + 1tbsp) unsalted butter, diced into cubes and softened
- 1 cup good quality jam
Instructions
- Preheat the oven to 350ºF (180ºC) ten minutes before using, with a baking sheet in it. Lightly grease a 9 x 1-inch loose bottom tart pan.
- Whisk the flour, baking powder and sugar in a large bowl. Add the beaten egg and butter. Using a fork, mix the butter and egg into the flour until it forms crumbly mixture. Using your hand bind this mixture into a dough and then turn onto a lightly floured surface and knead 3 times with the palm of your hands until smooth. Form into a ball and chill in the fridge to 30 minutes.
- Remove the dough from the fridge and cut off 1/3. Wrap it and set aside in the fridge. Lightly roll the remaining 2/3 dough on a well floured countertop into a circle 3 inches larger than your tart pan. Roll the dough over the pin and use to line the bottom and sides of the pan. Trim off excess dough. Prick the base lightly with a fork then spread the jam evenly over the bottom.
- Roll the remaining 1/3 dough and cut into equal sized strips. Use the strips to line the top of the jam filling in a criss-cross pattern, starting from the centre and moving outwards. (use longer strips for the middle.). Fold over the edges of the dough and crimp to form a neat edge.
- Bake 30-45 minutes or until golden on top and cooked through. Remove from the oven and let rest 30 minutes before transferring onto a plate.
