Black Bean and Couscous Salad

I made this salad 3 days ago and chilled it in the fridge. I have just finished eating the left overs and I am planning to make it again, tomorrow. I added two cups black beans and 2 cups sweet corn kernels, because I really love corn. I loved the addition of cayenne pepper because it enhances the flavour. You can adjust ingredients to suit you. I wish you a very happy week, ahead. It snowed yesterday…all the trees in my backyard are covered in snow!!!

Black Bean and Couscous Salad

Salad Ingredients 

  • 1 cup dry whole wheat couscous (yields 3 cups)
  • 2 cups black beans (1 x 540ml/19fl. oz can)
  • 1 cup diced cucumber (½ English cucumber)
  • 1 cup diced bell pepper (medium bell pepper)
  • 2 cups canned or frozen corn kernels 
  • 2 cups diced tomato  (2 medium tomatoes)

Salad Dressing

  • 6 tablespoons extra virgin olive oil
  • 4 tablespoons freshly squeezed lemon juice
  • ½ teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • Salt to taste

Instructions

  1. Prepare couscous: pour 1 cup couscous in a medium saucepan. Add 1 cup boiling water and stir. Cover and let stand for 5 minutes. Drizzle 1 tablespoon olive oil and fluff the couscous with a fork.
  2. Prepare Salad Dressing: mix all dressing ingredients and add enough salt to taste. Shake thoroughly to combine.
  3. Toss salad ingredients: mix all salad ingredients in a bowl. Pour dressing over and toss to combine. Set aside, at least 30 minutes, for flavours to meld before serving.

measurements

  • 341ml 12oz selection whole corn kernels = 2 scant cups (it does not have a lot of water)
  • 540ml 19 fl.oz can Cedar black beans = 2 cups
  • 1 medium bell pepper diced = 1 cup
  • ½ seedless English cucumber diced = 1 cup
