Cheese Paratha

I watched Huma’s you-tube video and thought the recipe seemed easy and straightforward, but once I started making the cheese filled flatbreads it wasn’t as easy as it looked. I think I have to try ten more times before I can up my skills to her level. I added cheddar cheese as a filling but next time, I shall use a good melting cheese like mozzarella or Monterey Jack or Gruyère and white all-purpose flour only. I didn’t understand a word but relied on the subtitles. Have a lovely week!

Cheese Paratha

Ingredients

  • 190g (1½ cups) all purpose flour 
  • 65g (½ cup) whole wheat flour
  • ¾ teaspoon salt
  • 2 tablespoons vegetable oil 
  • about ⅔ cup water (240ml american cup)

Instructions

  1. Whisk the flours and salt. Make a well in the centre. Add the oil in the well and enough water to make a soft dough. Form into a ball. Cover the ball of dough with oil and place in a lightly greased bowl. Cover and set aside for at least 30 minutes.
  2. Knead the dough for about 2 minutes on a floured surface and then divide it into 8 equal pieces and form each piece into a ball. Cover the balls of dough with a kitchen towel and let rest for 10 minutes.
  3. Roll each piece of dough as thinly as possible as shown (you should more or less see through it). Brush the surface with soft margarine. Fold opposite ends into the centre as shown and place grated cheese in the middle. Fold the other ends into the middle and press to seal the edges.
  4. Heat a heavy based pan on the stove top until hot, brush with 2 teaspoons oil and place the paratha to cook. Brush the top side with oil as well and cook both sides until golden and cheese is melting in the centre. Remove and set aside. Roll and cook the rest of the dough.
