Sweet dumpling is a winter squash shaped like a flat topped acorn squash. it has scalloped hollow lobes that make it look like a miniature pumpkin. The diameter is 3-4 inches (8-10cm) and it weighs about 1/2Ib (450g) or less.
The skin is white, cream to pale green and mottled with green, yellow or orange markings. The flesh is light golden with a fine and sweet texture, when baked.
Since this squash is difficult to peel, it is most often baked or roasted skin on. The skin is thin and edible like delicata squash.
It’s mostly halved and stuffed with meats, cheeses, vegetables or grains. You can also hollow it out from the stem end, scoop out the seeds and stuff it whole. if cooking whole, poke it several times with a fork or a small knife.
Baked squash can be added to salads, eaten as a side or stuffed squash eaten as a meal.
How to Store Sweet Dumpling
Since it’s a winter squash it can store for weeks in a cool dry place like a pantry. Make sure you keep it above 50F (10C) and below room temperature.

I a couple here on the east coast with the name carnival squash… looks just like these and were very good roasted.
I googled and saw it. it’s very very pretty. I,m glad to hear it’s good roasted!!!
