What is vichyssoise?

Vichyssoise is a leek and potato soup, pureed and thickened with fresh cream and garnished with chopped chives.

It’s traditionally served cold, but can be served warm or hot as well.

Vichyssoise was created in the USA by Louis Diat, a French chef who named it after his local town.  (Larrouse Gastronomique).
