What is Rösti?

Also known as röschti, röesti

A Swiss dish of grated potatoes formed into a small or large flat cake and fried until golden. The potatoes are parboiled skin on, left to cool completely, then coarsely grated. Raw potatoes may also be grated and fried. It’s always best to use waxy potatoes.

Sometimes, onion and bacon may be added and the rosti topped with cheese

Rösti is originally a farmers’ breakfast from German-speaking Switzerland, but is now a Swiss national dish, highly popular on both sides of the Röstigraben. Each region has its own version. The Bernese, for example, are known for their crispy Rösti fried in butter. (My Switzerland)

Rosti of Bern has bacon and chopped onions added to the potatoes.
