Cream of Cucumber Apple and Potato Soup

The best part about this soup was the complimentary taste of apple and cucumber. There are no additives, just cucumber, apple, potato. salt and pepper. I added some cream to give it that smooth velvety taste and a dollop of cheddar cheese to enhance flavour. The soup was served with the Three Cheeses Savoury Bread. I skipped the main course and just went to bed. I wish you a very pleasant week!

Melt the olive oil in a pan, add the onion, Jalapeño, green bell, cucumber, potato and apple. Sauté for 5-7 minutes until soft. (I added and extra kick of chilli flakes)

Add the stock (broth), bring to the boil and simmer for 15-20 minutes until potatoes are tender. Remove from heat. Blend the soup until creamy, then add the cream and adjust the seasoning. If the soup is too thick, add more cream. You can chill and serve this soup cold..

OR return the soup to the pot and heat until piping hot and serve hot

Cream of Cucumber Apple and Potato Soup

Ingredients

  • 2-3 tablespoons olive oil
  • 1 medium onion, peeled, and chopped
  • 1 Jalapeno pepper seeded and finely chopped 
  • ¼ cup finely chopped green bell pepper (capsicum)
  • 1 large English cucumber, peeled, cut lengthways, seeded and chopped. (2 cups when diced)
  •  2 cups diced potatoes
  • 1 medium apple peeled and chopped
  • 500ml (2 cups) vegetable or chicken stock (broth)
  • Salt and freshly ground black pepper
  • ½ cup 35% cream (or more)

Instructions

  1. Melt the olive oil  in a  pan, add the onion, Jalapeño, green bell, cucumber, potato and apple. Sauté for 5-7 minutes until soft then add the stock (broth) and bring to the boil. Simmer for 15-20 minutes until potatoes are tender. Remove from heat..
