I made these bars some three months ago. I’ve finally managed to do the post so you can imagine how elated I am right now! They are sugary and addictive. I couldn’t stop eating. I remember waking up, one day, at 2.00 am and rushing downstairs to have another bar. I was so glad when they got finished, but I am thinking of making them again, soon. My life has been busy. What about you? The weather in Canada is rather cold for June but we do have lots of sunshine today. Have a wonderful weekend my friend. Yes I can’t wait for the weekend because I’ve had a very long week!

Chocolate Honey Oat Bars

Preparation time; 20 minutes; Baking time: 25 minutes; Makes: 11 x 7 inch (28 x 18cm) Slab

Ingredients

  • 180g (1½ sticks, ¾ cup, 12 tablespoons) butter
  • 180g (1 cup) light brown sugar
  • 4 tablespoons (¼ cup honey or maple syrup)
  • 320g rolled oats (3½ cups)
  • 1 cup cornflakes
  • ½ cup chocolate chips

Instructions

  1. Preheat he oven to 360F (180C) ten minutes before baking. Grease and line the base of an 11 x 7 inch (28 x 18cm) pan with overhanging parchment.
  2. Heat butter, sugar and honey (or maple syrup) in a saucepan over low heat, stirring with a wooden spoon, until butter is melted and sugar is dissolved.
  3. Remove from heat, stir in oats, cornflakes and chocolate chips and stir to combine.
  4. Transfer mixture to prepared pan, pressing down with the back of a spoon to evenly flatten. (I sprinkled currants on top but it was a bad idea because they started burning before the oat bars were cooked. )
  5. Bake 25 minutes or until golden and firm. Let cool 10 minutes then slice into squares then let cool completely before removing from pan.

Points to Note

  2. 1 cup rolled oats = 90g
  3. ½ cup chocolate chips = 100g
