My Favourite Salads
Some of the best salads I’ve ever eaten are those simple ones that take a few minutes to make. I am not really a fan of avocado but every recipe I’ve ever tried with avocado left me wanting more, like this guacamole. The day I made it, I had an aching stomach at the end of day because I’d eaten so much tortilla chips. I would even hate to disclose how much I ate.
For this salad, you can use any lettuce, citrus fruit and nuts. This combination I have here, was excellent. I would do it all over again. If you have some recipes with avocado, please share with me. I would love to incorporate more avocado in my diet. Have a wonderful week ahead
- Apple Cider Dressing
- 4 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and freshly ground pepper to taste
Dressing: shake all salad ingredients in a small jar. Season with salt and freshly ground pepper.
Wash, chop and spin endive leaves and place in a salad bowl. Add grapefruits segments and avocado slices.
Drizzle dressing over the salad and serve.
Curly Endive Avocado and Grapefruit Salad
Preparation time: 30 minutes; Serves: 4
Ingredients
- 1 small head curly endive (frisée lettuce)
- 2 firm avocados, seeded, scooped and sliced
- 2 ruby red grapefruits, peeled and segmented

We tried this and all the adults loved it. The children/teenagers were a bit less loving of the grapefruit! Apparently it’s an acquired taste.

I am not a fan of avocado! I have tried it several ways and still dislike it. My husband, however, would love this salad!
I neither hate nor love avocado. I can eat it or not eat it and I won’t notice the difference. I used to eat a lot of avocado when I was in school though. Have a fabulous week!

You must have a direct line camera into my kitchen. We just polished off a snack salad very nearly like this one – mixed field greens, red pepper strips, tomato cubes, avocado slices, and a few black olives – all sprinkled with some raspberry vinaigrette. Meatloaf, barley and beef gravy, collard greens and cornbread for dinner.
