Curly Endive Avocado and Grapefruit Salad

My Favourite Salads

Curly Endive Avocado and Grapefruit Salad myfavouritepastime.com_3135Some of the best salads I’ve ever eaten are those simple ones that take a few minutes to make. I am not really a fan of avocado but every recipe I’ve ever tried with avocado left me wanting more, like this guacamole. The day I made it, I had an aching stomach at the end of day because I’d eaten so much tortilla chips. I would even hate to disclose how much I ate.

Curly Endive Avocado and Grapefruit Salad myfavouritepastime.com_3136For this salad, you can use any lettuce, citrus fruit and nuts. This combination I have here, was excellent. I would do it all over again. If you have some recipes with avocado, please share with me. I would love to incorporate more avocado in my diet. Have a wonderful week ahead

    1. Hi
I am glad the adults liked it. Next time you can sub the grapefruit with any other citrus fruits, like tangerine or oranges. It works as well. Thanks for the feedback and do have a lovely weekend!

    1. I neither hate nor love avocado. I can eat it or not eat it and I won’t notice the difference. I used to eat a lot of avocado when I was in school though. Have a fabulous week!

  1. Looks like a delicious salad, Liz! I love avocado, too. I actually have to be careful buying it, because I can’t control myself around it! Your dressing sounds wonderful, too. I love dressings with apple cider vinegar in them. Thanks for sharing this!

    1. Hey Lignum,
Welcome back. I hope you had a great time, wherever you were. Avocado on toast with salt and pepper, that sounds simple and nice. I shall try it. Have a great week!

  2. You must have a direct line camera into my kitchen. We just polished off a snack salad very nearly like this one – mixed field greens, red pepper strips, tomato cubes, avocado slices, and a few black olives – all sprinkled with some raspberry vinaigrette. Meatloaf, barley and beef gravy, collard greens and cornbread for dinner.

    Virtual hugs,

    Judie

    1. Yours sounds like the top of the charts. I absolutely adore the way you eat, Judie. You inspire me. I need to add some collard green to my diet. Have fun and enjoy the rest of the week!
      Virtual Hugs to you too…
