Basque Style Chicken myfavouritepastime.com_2920I always stock a lot of tomatoes, red bell peppers and red wine. I love the colour red in food. Tomato is a great ingredient because it’s so versatile. It can be used raw in salads, or to make the various sauces, like marinara or fresh soups, but you can also drink tomato juice although I can’t remember the last time I had some. The closest I had, was this Simple Gazpacho, during summer. The other day a friend of mine made a tomato pie. She basically filled a nice crunchy pie shell with fresh tomato slices, sweet onions, and fresh herbs and topped it with a mixture of shredded cheeses. It tasted really good. I think I’m going to try it out one of these fine evenings.

Basque Style Chicken myfavouritepastime.com_2918Today I want to share with you the “Basque style chicken” This dish often includes tomatoes and sweet or hot red peppers and wine. I used sweet red peppers, dry white wine and smoked paprika for the recipe. It’s quite simple to make but very delightful to the palate. If you’ve never tried it, you still have an opportunity to do so! I wish you a pleasant week!

  • Ingredients
  • 10 chicken drumsticks (1kg chicken pieces)
  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 3 garlic cloves, crushed
  • 2 cups, skinned and diced tomatoes
  • 2 medium red bell peppers char grilled, skinned and julienned
  • ½ teaspoon chilli (pepper) flakes
  • 1 teaspoon smoked paprika
  • 120ml (½ cup) dry white wine
  • Salt and freshly ground pepper

Basque Style Chicken myfavouritepastime.com_4321Brown chicken in a pan or skillet with 1 tablespoon olive oil, remove and set aside, drain rendered fat, if any.

Basque Style Chicken

Preparation time:30 minutes ; Cooking Time: 1 hour; Serves: 5

Ingredients

  • 10 chicken drumsticks (1kg chicken pieces)
  • 2 tablespoons olive oil

  • 3 garlic cloves, crushed
  • 2 cups, skinned and diced tomatoes
  • 2 medium red bell peppers char grilled, skinned and julienned
  • ½ teaspoon chilli (pepper) flakes
  • 1 teaspoon smoked paprika
  • 120ml (½ cup) dry white wine
  • Salt and freshly ground pepper

Instructions

  1. Brown chicken in a pan or a skillet with 1 tablespoon olive, remove and set aside, drain rendered fat, if any.
  2. Heat the remaining olive oil and sauté onions until golden brown. Add garlic and peppers, and stir 1 minute, then tomatoes, paprika and chilli flakes, and wine. Season with salt and pepper. Cook uncovered for 12 minutes until the wine is absorbed.
  3. Add chicken and cook 20-30 minutes or until fully cooked. Serve.
  4. Note: one medium drumstick is about 100g

  1. I love to see all the preparation photos…they just give such a nice clear view to preparation of the dishes you present on here. I tend to be the kind of person who is not too adventurous trying new recipes, but bit by bit you are nudging me out of this habit of mine Liz! Can I ask what you served it with?

      I served it with some steamed rice, but then I had left overs and the next day? mmm..with short pasta. The wine and the roasted red peppers are key to the taste of this dish. It was wonderful. Have a great weekend!
