My Favourite Salads
Strawberries are an enigma to me. They always look beautiful and have that characteristic aroma, but you can never tell what they’ll taste like. This is what wiki says about strawberries: “The fruit is widely appreciated for its characteristic aroma, bright red color, juicy texture, and sweetness” I agree about everything except “the sweetness” How can I tell a sour strawberry from a sweet one by looking? Please, if you have the formula, I’d be glad to have it. Yesterday I bought some deep red and juicy looking strawberries but they were so sour, I’ve no words to describe them.
I’ve just been reading yahoo answers and someone suggested: “If you want a sweet tasting strawberry buy small organically grown strawberries, but be careful though, many farmers markets say they are organic when they are not” Guess what the second person said? “Grow your own strawberries”. I am not starting a strawberry farm soon, but luckily the day I made this salad, the strawberries were very sweet and juicy. I hope you’ll like the salad. I did.
- Dressing ingredients
- ¼ cup extra virgin olive oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon finely chopped fresh mint or I teaspoon dried mint, crumbled
- 2 tablespoons honey
- Salt and freshly ground pepper to taste
To make salad dressing: mix all salad ingredients in a jar and shake thoroughly or blend the ingredients with a whisk in a bowl.
Let stand for 30 minutes at room temperature for ingredients to meld.

- 200g (½Ib) fresh baby spinach leaves
- 1 cup sliced, fresh strawberries
- 1 small red onion thinly sliced
- 3 tablespoons toasted pumpkin seeds or toasted nuts to top
- 50-100g Feta cheese cubed or crumbled to top
Please always remember to assemble all ingredients before you start
Mix spinach, strawberries and onions in a large bowl and sprinkle dressing over the salad. Toss gently to combine. Top with cubed or crumbled Feta cheese and pumpkin seeds.
It tasted so good. I loved it!!!!

This looks beautiful. I’m fortunate in that a pick your own basket strawberry farm is less than an hour’s drive from my home, so I’m always looking for yummy things to do with the wonderful berries.

It sounds refreshing. I’ve never had strawberries in a salad that wasn’t a fruit salad though. 🙂
My preference for strawberries are the chocolate coated varieties. I never seem to go wrong with those. 🙂 Have a lovely friday and weekend ahead.
Chocolate coated is great too. `I think you can add strawberry to anything you deem fit for your palate. My Friday was great and I’m sure the weekend will be too’Enjoy yours!

Well, I’ve already got the Feta !! This salad looks so summery and refreshing. About strawberries… I’m often so disappointed in fruit of any kind….(in the grocery stores) because they’re often picked green and never really ripen to that ‘juice running down your neck’ juiciness. Cure for that…. get my but to a farmers’ market !!

I do grow my own strawberries, in pots, but that doesn’t mean they are always sweet. Usually, if the strawberries are on the sour side, I marinate them in sugar and lemon juice or sugar and orange juice.
