My Favourite Chicken Recipes
Which cut of the chicken do you love most? It’s hard to say because it depends on what you want to cook. Boneless, skinless chicken thighs are easy to cook, are pocket friendly and are arguably the tastiest part of the chicken. I always stock lots of boneless thighs, wings and breasts. Chicken breasts are probably the most popular cut of chicken. They can be baked, roasted, pan fried, grilled and even stuffed. Drumsticks are certainly not my favourites.
Today I want to share a recipe for spicy boneless thighs. The basis of this recipe is the marinade, which has several ingredients including my favourites, toasted sesame oil, spring onions and honey. The longer you marinate the better it will taste but please marinate for a minimum of 2 hours. The chicken can also be grilled in the BBQ, We really enjoyed eating the chicken with some salsa on the side, I added some Feta cheese to the salsa. I hope you enjoy the chicken the way we did!
- Marinade Ingredients (makes 180ml (¾ cup)
- ⅓ cup lemon juice
- ½-1 teaspoon dried chilli flakes
- 2 tablespoons olive oil
- 2 teaspoons sesame oil
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 cloves garlic, crushed
- 2 spring onions finely chopped
- 2 tablespoons finely chopped coriander (cilantro)
- Salt and freshly ground pepper to taste
Marinade Ingredients: Combine all the marinade ingredients
in a bowl and mix thoroughly. Pour over the chicken and refrigerate for at least two hours, stirring occasionally.
Bake at 400°c for 20-30 minutes or until fully cooked, but still juicy inside, turning once (I baked for 30 minutes). Use a lightly oiled grill pan for best results.
Simmer the left over marinade for 10-15 minutes
then drizzle over chicken, after serving.
And serve some salsa on the side.
Spicy Lemon Cilantro Chicken with Salsa
Preparation time: 30 minutes; Cooking time: 30-45 minutes; Serves: 4

8-12 boneless skinless chicken thighs, trimmed off excess fat and flattened to ¼ inch thickness

Boneless, skinless chicken thighs are especially affordable in our town. It is one of the reasons why I prefer them to chicken breasts which are tougher and “dryer”.

Yes, we just voted on Wednesday. We will know the result on the 22nd. There are many remote places in this country where it cannot be reached by modern transportation. We are still waiting for the result from those places to know which candidate is going to win. 🙂

I am as much a thigh girl as that I love a plump drumstick (simmered asian style or roasted smothered in mustard and rosemary). All said I just have a soft spot for chicken and this dish looks like it would hit the spot! I do not own a gridle pan that can go into the oven (shameful I know, I know) do you think this would work on a foil covered baking sheet?

Are cilantro and coriander the same thing? You mention cilantro in the title but I don’t see it in the recipe–I love cilantro!
