Pasta with Sun-dried Tomatoes and Red Wine myfavouritepastime.com_1513Pasta is my go to food, when I’m feeling lazy. It’s easy to make, is delicious and very versatile. The key ingredients in this recipe besides the pasta are Italian plum tomatoes (Roma), sun-dried tomatoes and red wine. Please ensure that you buy good quality sun-dried tomatoes and good quality wine, that you’ll enjoy sipping as you cook.

  • Ingredients
  • 400g (14oz) pasta
  • 3 tablespoons extra virgin olive oil
  • 
I small onion finely chopped
  • 2 cloves garlic, crushed
  • ½ teaspoon dried chilli flakes
  • 150g (5.5oz) sun-dried tomatoes in oil, drained and chopped (½ cup when chopped)
  • 2 large Italian tomatoes, finely chopped (2 cups when chopped)
  • ⅓ cup red wine
  • 1 cup grated parmesan cheese
  • ¼ cup finely shredded basil
  • Salt and freshly ground black pepper

Pasta with Sun-dried Tomatoes and Red Wine myfavouritepastime.com_0701Heat oil in a heavy based pan over medium heat and cook onions until soft. Do not brown. Add garlic and stir for one minute.

Pasta with Sun-dried Tomatoes and Red Wine myfavouritepastime.com_0705Increase heat and add the chillies, sundried tomatoes and tomatoes and cook 5 minutes, stirring. Season with salt and pepper.

Pasta with Sun-dried Tomatoes and Red Wine myfavouritepastime.com_0709Add the red wine, reduce heat and cook until absorbed. Meanwhile boil pasta in plenty of salted water as per packet instructions until al dente. Drain thoroughly and reserve 1 cup pasta water.

  4. Quick question….what would you suggest instead of red wine? I cannot drink red wine (white is fine) so would the white work as well or would it give it a different taste? I love pastas too and you have certainly found me some new and interesting ones to try. Nice of you to do that Liz! LOL…..hoping your weekend is good. My sis, grandson and I are off to a big street market that happens every first Sunday in July. Quite a big deal so I’m hoping to find some bargains. If not, we’ll get to go out for lunch!       Oh yes white wine would work too, a full bodied one. Make sure you like the taste of the wine you use. I love red wine because it gives a strong aroma and flavour and also imparts a nice colour, too. I am watching the Netherlands/Costa Rica match and this time I am supporting Netherlands (LOL). We have missed hundreds of opportunities. Please let me know what bargains you come across. I love huge markets. The little ones tend to bore me quickly. Have a lovely weekend!
