My Favourite Chicken Recipes
The recipe I want to share today is simplicity itself. First of all you need a baking pan 11 x 22 inches, preferably a Pyrex, brushed with some olive oil. Then you need a bed of chopped veggies (I used onions, carrots and zucchini.), you can vary the vegetables to your liking. Drizzle the bed of veggies with some olive oil and sprinkle fresh or dried herbs if you want.
You also need 40g each of good quality onion and tomato soup mix, combined in a large plate, and chicken pieces, washed and patted dry (I used chicken wings). Coat the chicken pieces with the combined soup mixture and arrange them on the bed of veggies and bake in a hot oven 410°F (210°C) for 30-45 minutes. Be sure to turn the chicken once. Once ready, serve with your favourite side dish. I love this chicken because it’s easy to make. The final taste will depend on the quality of the soup mixtures. I hope you like it. - 2 medium carrots, peeled and chopped into 1 cm cubes
- 2 medium zucchini, chopped into 1 cm cubes
- 1-2 tablespoons olive oil
- 1.25kg (2.7Ib) chicken wings
- 40g packet good quality French onion soup-mix
- 40g packet good quality tomato soup-mix
- Freshly ground pepper to taste
Please always assemble all ingredients before you start. Preheat oven to 410°F (210°C). Trim off excess fat and sinew from chicken. Wipe chicken and pat dry with paper towels. Set aside.
Place vegetables in a single layer in a large baking dish. (I used Pyrex 13 x 9 inches). Drizzle olive oil over the vegetables. Add pepper to taste.
Combine soup mixes in a medium plate. Coat chicken pieces in soup mixture. Shake off excess.
Arrange chicken wings on top of vegetables. Bake 30-45 minutes, turning once, or until chicken is browned and cooked inside. Serve immediately. (I baked 45 minutes)
Serve with your favourite side dish

- If you use other cut such as drumstick or thighs you’ll need to bake longer.

Looks like a fun recipe, I’d use only white meat chicken to cut the fat and check carefully about salt in any soup/soup mix added, I’ve found some low-salt chicken stocks I’ve been using for cooking now instead of the salt-loaded regular stock:

Omg tomato allergies? Never heard of that, but what a pity. You can sub tomato soup with another favourite soup that goes with onion soup. I’m sure it would still work. Happy weekend!

Nice one! I like simple recipes that taste great. It looks wonderful served over the rice and that is probably what I would do to. You are a blogging machine these days Liz…..good for you! We’ve had a couple of hot days and now it’s cooling off again! Kind of like a roller coaster ride in some respects. We did have a bush fire not too far above the town so it tells us how dry things are. Fortunately it was contained and put out by our local firefighters. Off I go to bed. talk about roller coasters. I was in Canada’s Wonderland the other day, spinning on those roller coasters but I couldn’t get on that Leviathan thing….my kids went for several rides with both arms flailing in the air…The weather here has been cool the past two days. I just love the fresh air streaming in through the open windows. I am watching world cup France vs Germany but supporting neither team. Don’t I hate those bush fires. I’m glad it was contained!
