Strawberry Cloud

My Favourite Desserts

Strawberry Cloud myfavouritepastime.com_1532Don’t you love those recipes that say “Place all ingredients in a pot and simmer for 2 hours and serve or place all ingredients in a blender and puree then serve?” Those are the sorts of recipes I love. They are best for the ‘so-called busy days’. Did you ever stop eating on a busy day?

Strawberry Cloud myfavouritepastime.com_1533The cream cheese can be substituted with tofu, but you have to taste and adjust the sugar and other ingredients, accordingly. I never eat skinny desserts because I eat dessert when I want to spoil myself. I’ve had a long tiring day and I’m falling asleep, so wish you the best of times.

  • Ingredients
  • 450g (1Ib, 1 Punnet) strawberries, hulled and chopped (leave a few for garnish)
  • 275g (10oz) cream cheese, diced and brought to room temperature (you can also use tofu)
  • Juice of half lemon
  • 3-4 tablespoons brown sugar
  • 1 teaspoon vanilla essence
  • 2 teaspoons unflavoured gelatin, dissolved in 2 tablespoons water
  • Whipped cream and a few strawberries garnish

Strawberry Cloud myfavouritepastime.com_1527Please always remember to assemble all ingredients before you start. Oops I didn’t include the dissolved gelatine.

Strawberry Cloud myfavouritepastime.com_1534This dessert took a very short time to prepare but we enjoyed eating it.

  1. This looks delicious. I haven`t tasted this season`s strawberries yet but these pictures made me want to. Soon…

  2. We hope you had a great weekend to recharge. This dessert looks lovely. Have you tasted it with tofu? We’ll probably add caramel or a sugary syrup just to make sure we spoil ourselves. Hehehe.

    1. Hi Rey and Lyn,
No I’ve not tasted it with Tofu because I prefer cream cheese. If you ever try it with Tofu, please let me know!
      Best wishes,
      Liz

  3. This is the type of desert that just sceams summer. Decandently creamy and fresh with the light sweet zing of strawberries – hand me that spoon please! (and no….no matter how busy my day, not eating just isnt an option – hec, food is what I am busy with a larg part of the time to start with ;-> )

    1. Ha ha Afra, you crack me up and that reminds me I’ve been on my way to your blog for days…now I am off to the Netherlands, see ya later and thanks for visiting me and the lovely comments!

    1. Hi there Frank,
You could take out the sugar and use a low-fat cream cheese. No problem at all. I’ve not tried stevia because I take very little in my diet so no need to panic. Have a lovely Sunday!

      1. Hey, Liz! I’ve been a bit down these past weeks due to a broken foot that needed immobilisation 😦 I haven’t been in the kitchen for a while now but I have some recipes that I haven’t posted yet so I guess they’ll do till I can stand on my foot again. Have a great weekend!

        1. Oh no I’m sorry to hear you broke your foot. How unfortunate. I hope the foot is healing well. Take time and focus on getting better. I wish you a speedy recovery and look forward to the time when you’ll stand on your foot again. Wish you all the best and thanks for keeping me updated. Take care!!!
          Hugs…

  4. Another option for those who want to keep it vegan is a vegan product called Better Than Cream Cheese by Tofutti brand foods. This looks so refreshing!

    1. Hi,
I’ve googled straight away. I hope I can find it in my local store too. I so want to try it. Thanks for the information and wish you a good weekend ahead!

    1. Well I first made it without the gelatine but it was taking too long to set. So I added 2 teaspoons gelatine and it set in a very short while. The gelatine helps it to set. It is tasteless and odourless and I think there are vegetarian options too! Best wishes!

    1. Hi John,
Great to see you. The dessert is simple and delicious. I think I should go berry picking too! Have a great week!

  5. We are awash in fruits at this time of year. Presume any fruit would do. The pit fruits are starting to come in. It will be a good change from berries, although the freezer still groans with the load of berries in there! Still getting blueberries, and they are yum!

    Virtual hugs,

    Judie

    1. Hi Judie
You are lucky your freezer is groaning with loads of berries. I wish I could sneak in there and make myself some unforgettable smoothies. I love blueberries, especially in pancakes!
      Virtual hugs, my friend
