My Favourite Desserts
Don’t you love those recipes that say “Place all ingredients in a pot and simmer for 2 hours and serve or place all ingredients in a blender and puree then serve?” Those are the sorts of recipes I love. They are best for the ‘so-called busy days’. Did you ever stop eating on a busy day?
The cream cheese can be substituted with tofu, but you have to taste and adjust the sugar and other ingredients, accordingly. I never eat skinny desserts because I eat dessert when I want to spoil myself. I’ve had a long tiring day and I’m falling asleep, so wish you the best of times.
- Ingredients
- 450g (1Ib, 1 Punnet) strawberries, hulled and chopped (leave a few for garnish)
- 275g (10oz) cream cheese, diced and brought to room temperature (you can also use tofu)
- Juice of half lemon
- 3-4 tablespoons brown sugar
- 1 teaspoon vanilla essence
- 2 teaspoons unflavoured gelatin, dissolved in 2 tablespoons water
- Whipped cream and a few strawberries garnish
Please always remember to assemble all ingredients before you start. Oops I didn’t include the dissolved gelatine.
This dessert took a very short time to prepare but we enjoyed eating it.
Strawberry Cloud
Preparation time: 30 minutes; Chilling time: 2 hours Serves: 4
Ingredients
- 450g (1Ib, 1 Punnet) strawberries, hulled and chopped (leave a few for garnish)
- 275g (10oz) cream cheese, diced and brought to room temperature (you can also use tofu)
- Juice of half lemon
- 3-4 tablespoons brown sugar
- 1 teaspoon vanilla essence
- 2 teaspoons unflavoured gelatin, dissolved in 2 tablespoons water
- Whipped cream and a few strawberries garnish
Instructions:
- Blend strawberries, cream cheese, lemon juice, sugar and vanilla essence until smooth. Stir in dissolved gelatine.
- Divide mixture into 4 serving dishes and garnish with strawberries and whipped cream.
- Chill for 2 hours or until set.
How to dissolve gelatin:
- Place two tablespoons water in a small heatproof bowl. Sprinkle gelatin, evenly on the water surface and set aside for about 5 minutes until it becomes spongy.
- Stand the bowl with gelatine in a container with hot water and stir until the gelatin dissolves. Allow to cool slightly then use.

This is the type of desert that just sceams summer. Decandently creamy and fresh with the light sweet zing of strawberries – hand me that spoon please! (and no….no matter how busy my day, not eating just isnt an option – hec, food is what I am busy with a larg part of the time to start with ;-> )

I think I could find a low-fat cream cheese for this, but what about taking out the sugar? Have you tried Stevia instead?

You could take out the sugar and use a low-fat cream cheese. No problem at all. I’ve not tried stevia because I take very little in my diet so no need to panic. Have a lovely Sunday!

Looks yummy, just curious how it would taste without the gelatin, what does the gelatin do?
Well I first made it without the gelatine but it was taking too long to set. So I added 2 teaspoons gelatine and it set in a very short while. The gelatine helps it to set. It is tasteless and odourless and I think there are vegetarian options too! Best wishes!

We are awash in fruits at this time of year. Presume any fruit would do. The pit fruits are starting to come in. It will be a good change from berries, although the freezer still groans with the load of berries in there! Still getting blueberries, and they are yum!
