I probably baked these muffins in April 2013. It was certainly, a vey long time ago. As I mentioned before, I tend to cook or bake so many things but never have enough time to post. I have since baked them several times I’ve lost count. We love them so much. What more can I say? The main ingredients are: sweet potatoes, bacon and cheese, as stated above but I also added some green (spring) onions to the mixture. I love spring onions and I love bacon and cheese. Who doesn’t? You can substitute the bacon with any other meat you prefer, and the cheddar cheese with another cheese, if you wish, but personally I rather just have the mature cheddar and bacon. I hope you find time to try them and if you do, please give me a feedback.

  • Ingredients
  • 250g (2 cups, 9oz) all-purpose flour
  • 4 teaspoons baking powder
  • ½ teaspoon kosher salt
  • ½-1 teaspoon freshly ground pepper (I added 1 teaspoon)
  • 2 eggs
  • ½ cup mashed sweet potatoes
  • 80g (⅓ cup) butter, melted (I used salted butter)
  • 375ml (1½ cups) milk
  • 1 cup coarsely grated cheddar cheese,
  • ½ cup fried bacon, crumbled or smoked ham, diced
  • ½ cup finely chopped green (spring) onions  (If you like you can use chives)

Preheat oven to 425°F (220°C). Brush a large, 12-hole muffin tin with melted butter, shortening, spray or oil. (I tried to use paper cases but the muffins stick on the paper, so please don’t use paper cases!)

Sift flour, baking powder, salt and pepper into a bowl.

Make a well in the centre.

In another bowl, whisk together eggs, mashed potatoes and butter

until well blended.

Whisk in milk until blended.

Add the egg mixture to the flour mixture

and stir until just blended.

Gently fold in cheddar cheese, bacon or ham and green onions. (I used Canadian peameal bacon)

until just mixed

Spoon mixture, evenly, into prepared tin (pan). Bake 25-30 minutes until golden or until a toothpick inserted in the centre comes out clean. Stand for 5 minutes, then loosen with a knife and transfer the muffins onto a wire rack to cool. (I have baked these muffins several times at 425°F (220°C) for 25-28 minutes.)

Sweet Potato Bacon and Cheese Muffins

Preparation time: 20 minutes; Baking time: 25-30 minutes; Makes: 12-14 muffins depending on size

Ingredients

  • 250g (2 cups, 9oz) all-purpose flour
  • 4 teaspoons baking powder
  • ½ teaspoon kosher salt
  • ½-1 teaspoon freshly ground pepper (I added 1 teaspoon)
  • 2 eggs
  • ½ cup mashed sweet potatoes
  • 80g (⅓ cup, 3oz) butter, melted (I used salted butter)
  • 375ml (1½ cups) milk
  • 1 cup coarsely grated cheddar cheese,
  • ½ cup fried and crumbled  bacon, or smoked ham, diced
  • ½ cup finely chopped green onions (If you like you can use chives)

Instructions

  1. Preheat oven to 425°F (220°C). Brush a large, 12-hole muffin tin with melted butter, shortening, spray or oil. (I tried to use paper cases but the muffins stick on the paper, so please don’t use paper cases!)
  2. Sift flour, baking powder, salt and pepper into a bowl. Make a well in the centre.
  3. In another bowl, whisk together eggs, mashed potatoes and butter until well blended. Whisk in milk until blended.
  4. Add the egg mixture to the flour mixture and stir until just blended. Gently fold in cheddar cheese, bacon or ham and green onions.
  5. Spoon mixture evenly, into prepared tin (pan). Bake 25-30 minutes until golden or until a toothpick inserted in the centre comes out clean. Stand for 5 minutes, then loosen with a knife and transfer the muffins onto a wire rack to cool.
  6. For cup measures: spoon the flour into the cup, heaping it up over the top, then slide a knife across the top to level off the extra. Be careful not to shake or tap the cup to settle down the flour or you will have more than you need. I use a 240ml, American cup.

Points to Note:

  • Please note that oven temperatures are given as a guideline only. You may need to add or reduce the suggested temperature depending on your oven. I have baked these muffins several times at 425°F (220°C) for 25-28 minutes.

    Savory muffin is a very rare delicacy in where I live. It is not something we can easily find in any bakery!
    I cannot wait to try this recipe!
    It’s gonna be fun to try it with different types of sweet potatoes we got here.
    We have the purplish mountain sweet potato, greenish honey sweet potato, orange highland sweet potato, yellowish cilembu sweet potato and the white Japanese sweet potato (it’s not imported from Japan, It is called so because it is white like Japanese folks. L-O-L!)

  5. If these taste half as good as they look, they are a winner for sure. I was glad to see you could put diced ham or cooked bacon! I tend to be one of those cooks who can’t often leave a recipe alone……I have to change something or add my own ingredient preference! I’m like that with my furniture….always moving it around, never satisfied with the way it is……I wonder what that says about my personality? LOL. Still, I sure like the sweet potato added to this, how healthful! Another one for my file as we don’t even have a cookie sheet here, never mind muffin tins! Guess we are supposed to be on vacation or something! LOL
