A must Try!
I probably baked these muffins in April 2013. It was certainly, a vey long time ago. As I mentioned before, I tend to cook or bake so many things but never have enough time to post. I have since baked them several times I’ve lost count. We love them so much. What more can I say? The main ingredients are: sweet potatoes, bacon and cheese, as stated above but I also added some green (spring) onions to the mixture. I love spring onions and I love bacon and cheese. Who doesn’t? You can substitute the bacon with any other meat you prefer, and the cheddar cheese with another cheese, if you wish, but personally I rather just have the mature cheddar and bacon. I hope you find time to try them and if you do, please give me a feedback.
This is the second day of the Chinese year of the Horse. To all my Chinese friends: I wish you a Happy and Fulfilling Year of the Horse. As my friend Hari, rightfully stated “May the year of the horse inspire us with the diligence, loyalty and strength of the horse”
- Ingredients
- 250g (2 cups, 9oz) all-purpose flour
- 4 teaspoons baking powder
- ½ teaspoon kosher salt
- ½-1 teaspoon freshly ground pepper (I added 1 teaspoon)
- 2 eggs
- ½ cup mashed sweet potatoes
- 80g (⅓ cup) butter, melted (I used salted butter)
- 375ml (1½ cups) milk
- 1 cup coarsely grated cheddar cheese,
- ½ cup fried bacon, crumbled or smoked ham, diced
- ½ cup finely chopped green (spring) onions (If you like you can use chives)
Please always remember to assemble all ingredients before you start
Preheat oven to 425°F (220°C). Brush a large, 12-hole muffin tin with melted butter, shortening, spray or oil. (I tried to use paper cases but the muffins stick on the paper, so please don’t use paper cases!)
Sift flour, baking powder, salt and pepper into a bowl.
Make a well in the centre.
In another bowl, whisk together eggs, mashed potatoes and butter
until well blended.
Whisk in milk until blended.
Add the egg mixture to the flour mixture
and stir until just blended.
Gently fold in cheddar cheese, bacon or ham and green onions. (I used Canadian peameal bacon)
until just mixed
Spoon mixture, evenly, into prepared tin (pan). Bake 25-30 minutes until golden or until a toothpick inserted in the centre comes out clean. Stand for 5 minutes, then loosen with a knife and transfer the muffins onto a wire rack to cool. (I have baked these muffins several times at 425°F (220°C) for 25-28 minutes.)
These muffins were a hit
If you love bacon, cheese and green (spring) onions) then this is a must try. I adored them!!!!
Sweet Potato Bacon and Cheese Muffins
Preparation time: 20 minutes; Baking time: 25-30 minutes; Makes: 12-14 muffins depending on size
Ingredients
- 250g (2 cups, 9oz) all-purpose flour
- 4 teaspoons baking powder
- ½ teaspoon kosher salt
- ½-1 teaspoon freshly ground pepper (I added 1 teaspoon)
- 2 eggs
- ½ cup mashed sweet potatoes
- 80g (⅓ cup, 3oz) butter, melted (I used salted butter)
- 375ml (1½ cups) milk
- 1 cup coarsely grated cheddar cheese,
- ½ cup fried and crumbled bacon, or smoked ham, diced
- ½ cup finely chopped green onions (If you like you can use chives)
Instructions
- Preheat oven to 425°F (220°C). Brush a large, 12-hole muffin tin with melted butter, shortening, spray or oil. (I tried to use paper cases but the muffins stick on the paper, so please don’t use paper cases!)
- Sift flour, baking powder, salt and pepper into a bowl. Make a well in the centre.
- In another bowl, whisk together eggs, mashed potatoes and butter until well blended. Whisk in milk until blended.
- Add the egg mixture to the flour mixture and stir until just blended. Gently fold in cheddar cheese, bacon or ham and green onions.
- Spoon mixture evenly, into prepared tin (pan). Bake 25-30 minutes until golden or until a toothpick inserted in the centre comes out clean. Stand for 5 minutes, then loosen with a knife and transfer the muffins onto a wire rack to cool.
- For cup measures: spoon the flour into the cup, heaping it up over the top, then slide a knife across the top to level off the extra. Be careful not to shake or tap the cup to settle down the flour or you will have more than you need. I use a 240ml, American cup.
Points to Note:
- Please note that oven temperatures are given as a guideline only. You may need to add or reduce the suggested temperature depending on your oven. I have baked these muffins several times at 425°F (220°C) for 25-28 minutes.

Wow, these look so good – and everything is better with bacon!
I totally agree. Bacon gives a lot of flavour. Have a wonderful week!
Liz
Yes Liz, definitely a must try!
They say that bacon is the one meat that can turn vegetarians into meat eaters. I’m not surprised. Bacon is delicious anytime of the day, or night! 🙂 Have great day.
Hi Lignum,
Bacon is contagious. I love it all the time!
Liz
They look divine!
Hi Lisa
Thank you. That fish and mussel stew must have tasted great! Mmmmm…Have a lovely week!

Fabulous muffins! 🙂
iThank you. Liz
I’m making these for sure on Superbowl Sunday!!! I just happened to have some sweet potatoes…and all the other ingredients.
Enjoy the Superbowl Sunday. I hope you enjoy them the way we did. Have the best of weekends!
Liz
These babies are so mouthwatering!
Savory muffin is a very rare delicacy in where I live. It is not something we can easily find in any bakery!
I cannot wait to try this recipe!
It’s gonna be fun to try it with different types of sweet potatoes we got here.
We have the purplish mountain sweet potato, greenish honey sweet potato, orange highland sweet potato, yellowish cilembu sweet potato and the white Japanese sweet potato (it’s not imported from Japan, It is called so because it is white like Japanese folks. L-O-L!)
Hi Hari,
I’ve eaten all the kinds of sweet potato you describe except the greenish honey sweet potato. That I never heard of or tasted. I love the etymology for the white japanese sweet potato. (LOL). Hari I hope you are enjoying your new year. I shall not forget it’s the year of the horse! I must remember that throughout the year. Best wishes
Liz
I love savory muffins. These look amazing! Thanks for sharing your recipe.
Me too. I love savoury muffins. Just had some for breakfast today. They were nice…have a fantastic weekend!
Liz
I’ve never tried baking savoury muffins but after this post I think I’ll give them a try soon. You’re totally right; cheese, bacon and spring onions are just The combination. A winner in every sense.
Cheers from the other side of the A Ocean 😉

Ha ha, I’m glad you also think cheese bacon and spring onions are a winner. You should try savoury muffins. Today for breakfast I had smoked ham and cheese muffins (with Gruyere cheese). Oh it’s so delicious. I ate four in a sitting and now my next meal, will be dinner.. Enjoy your weekend
Liz
Ooh so tasty!I like them! In Italy probably we will use “pancetta” instead of bacon, and another type of potatoes (here sweet potatoes are not so common) Mmmh .. it’s a great idea also for an omelette! Have a great week-end!Cris
Hi Cris,
Oh yes you can use pancetta instead of bacon and another potato or any root veggie that can be mashed. I love omelette with Bacon, tastes delicious. Thanks and have a nice weekend!
Liz
Hi Liz, It lokk so delicious! Will have to try it!

Oh yes please. Come over for four. Have a lovely weekend!
Liz
Just like me, my computer is flooded with pictures of the food I prepared in the past. I have yet to write about them.
These savory muffins look delish!
Hi Anna,
I’m glad I’m not alone. I’m trying so hard to catch up this year. It’s already starting to take a toll on me. I probably will start slowing down. Have a wonderful weekend. Thanks for complimenting.
Liz
My pleasure, Liz. Yes, and it doesn’t help when you are overwhelmed with more ideas. You will always find yourself in the kitchen baking and cooking. I’m that way too. Sometimes I just want to cook for my family and not document anything, but I end up doing it anyway, especially if it’s something too good not to share. I only stop when I become too ill to do anything.
Well, take it easy. Just kick back and enjoy the weekend. You can always resume blogging on Monday. 🙂
~Anna
Ha ha,
I thought I would take it easy, kick back and enjoy the weekend but my inbox is flooded so I guess I’ve to clear it before taking a break. I am cooking some Thai soup from my friends blog. Just making some stock right now. It smells delicious. This will be dinner for tonight and I guess I’ll be so excited, I’ll want to post it. Enjoy your weekend and thanks so much for the kind and calming words. Have a fantastic weekend.
Liz
I guess no rest this weekend on either camp he he he…too many things to do and if we choose to take a break, we will always playing catch up.
Oh, Thai soup! I want some right now. Can’t wait to see your post. Well, we are enjoying our weekend anyway, Liz. We are doing what we love. 🙂
~Anna
Hi Anna,
I’ve not stepped out the door (it’s snowing the whole day today) but I’m enjoying myself baking and cooking and watching movies. What more can anyone want on a cold dreary day? I hope I’ll get good photos for the soup…then I’ll post it. Thanks for conversing with me. I wish you all the best!
Liz
Doing what you love is the best therapy after all, especially on a cold dreary day. It’s in the 40’s here, so it’s not so bad. I’ve been invited to a birthday party at a local restaurant. So, I have to step away from blogging in a few. I have to take care of my children’s dinner as well, so I have to go for now. Can’t wait for the picture. I bet the soup is delicious! Thanks, Liz. Take care!
Hi Anna,
I totally agree with you. We are still freezing. The roads were so mushy today. I hope you enjoyed the birthday party at the restaurant. I hope you liked the photo of Thai soup. It’s a damn good one. Take care Anna, and have a lovely week!
Liz
P/S sorry I took so long to respond. My weekend has been super busy. We had a basketball tournament (my son’s). I’m half asleep by now…
Hi, Liz! No worries. We are all busy. It happens. It took me a while to respond to my messages when I was quite ill. I think I have offended some people, but it was beyond my control I wasn’t doing it in purpose. I just couldn’t respond to all at the same time.
Anyway, I wasn’t able to make it to the party. I was tired and feeling a bit ill the last minute. I had to cancel and just stayed home.
I checked out the soup and yes, it looks delicious and hearty; great for cozy family dinner. Thanks for sharing the recipe.
Thanks for stopping by, Liz. Have a fabulous week. 🙂
Anna,
I’m sorry to hear you were ill. Glad to note you’re feeling better now. I’m sad to hear you missed the party and just stayed in. I would have probably done the same here. The weather hasn’t been particularly great. I only go out for the “must do” things! Today is a lovely day though. I hope it stays this way for the rest of the winter. How hilarious!!! have a great day!
Liz
Wouldn’t that be nice if the weather stays like today, but bad news. We are going to have some snow this Wednesday then frozen mix (according to the forecast) on Thursday. How wonderful to be snowed in with your soup he he he….Warm regards 🙂
~Anna
The weather this year, is cursed the world over. The river Thames broke it’s banks in Britain and now the floods are even worse. I don’t want to hear the word SNOW I have nowhere to dump it. Soup and cold is a great combination. Have a good night!
Liz
I hear you, Liz. What a devastation! And, it happened during winter months. Flood in Europe, Snow in United States. We need to keep those who are affected by the flood in our prayers.
Yes, let’s have soup. My children and I had noodle soup when they came home from school. It hit the spot. 🙂
Nothing like a good bowl of soup on a cold afternoon after school. I would have loved that too! And several people lost their lives in the US. How sad. It’s such a devastating time. Have a great weekend despite the mishaps.
Liz
Thanks, Liz. Back at you. 🙂
Oh Liz !! Drool !! Why do you torture me with such delights ? 😉 Ralph xox 😀
Hi Ralph,
How’s your weekend? mine is full of baking and soup. Too much snow today. Better to chill inside. Thanks for complimenting.
Loz
Too much rain here. So cuddled up with my cats and log burner !!
Enjoy there fire and keep warm. Best wishes!
I hope you are keeping warm too my friend 😀
Very warm Ralph. Sitting by the fire and watching movies/cooking the whole day long. Thanks!
Liz
These look delightful! I can see why your family loves them so much… Wonderful recipe… I can see why my family will love them too!! 🙂
Hi,
I really hope your family will love them too. Happy Baking! Have a lovely weekend!
Liz
OMG! with all these ingredients the taste has to be amazing…. I’ll give it a try!
Hi,
The taste is amazing. Happy Baking!
Liz
These look so good, Liz! I bet they would have been great with the chili I just made.
Hi,
Ha..you’ve given me an idea. Next time I shall serve with some chilli. What a wonderful suggestion. Have a wonderful weekend!
Liz
I will have to make these soon! Bacon and cheddar, you bet! A wonderful muffin to go with a soup.
Hi Mama D,
I’m making your Thai soup tomorrow for dinner. I managed to buy all ingredients. I am so excited. I can’t wait, It’ll be snowing the whole day so soup is my plan for the day. Have a lovely weekend.
Liz
Love sweet potatoes! And these muffins look yummy. I need to try these someday. 🙂
Hi,
Me too. The muffins are delicious. Have a nice weekend.
Liz
If these taste half as good as they look, they are a winner for sure. I was glad to see you could put diced ham or cooked bacon! I tend to be one of those cooks who can’t often leave a recipe alone……I have to change something or add my own ingredient preference! I’m like that with my furniture….always moving it around, never satisfied with the way it is……I wonder what that says about my personality? LOL. Still, I sure like the sweet potato added to this, how healthful! Another one for my file as we don’t even have a cookie sheet here, never mind muffin tins! Guess we are supposed to be on vacation or something! LOL
Ha ha I’m just like you. Always playing around with ingredients especially when I’m cooking. Sometimes I end up with something so tasty and by then I can’t really remember what I added. What a shame! What would I call someone who is not satisfied with the “status quo” versatile, creative? leader? I can’t remember my management studies but i know it’s a good quality to have, especially if you want to move forward. Enjoy your holiday, Sandy, and thanks so much for your support. You have been my pillar of straight. I admire your consistency and dedication.
Liz
This looks so so tasty!
Yes they are very tasty! Great weekend to you!
Liz
My goodness, those looks awesome! I’m envisioning how flexible these finished muffins are, either enjoying them on their own or to accompany a hearty soup or stew. I vote “yes” to the bacon!
Ha ha Allison, you’ve cracked me up. I VOTE yes, yes yes to BACON too! I wouldn’t sub bacon with anything. Enjoy your weekend!
Liz
These look fabulous!
Thank you! Have a lovely weekend.
Liz
