With Garlic and Ginger
I love eating vegetables, besides bacon of course and somehow, I always include carrots in my meals. I love carrots, whether raw, cooked or sautéed. Is it because of the orange colour? I love orange, it signifies enthusiasm, fascination, and happiness and anyway it reminds me of the sun and sunny days are happy days.
According to Wiki, the Food and Agriculture Organization of the United Nations (FAO) reported that world production of carrots and turnips (these plants are combined by the FAO for reporting purposes) for calendar year 2011 was almost 35.658 million tonnes. Almost half were grown in China. Why is China growing so much carrot?
Carrots are great vegetables because they contain more than 80% water, only 7% sugar (the ones we have in my local store are so sweet, I wonder how much sugar content there is), about 0.2% fat and almost no starch (according to Wiki). And anyway, I always have this conviction that eating a lot of carrot will improve my vision in the dark! true or false? I enjoyed eating the veggies (I didn’t add any bacon) and I hope you enjoy them too!!!
Please always remember to assemble all ingredients before you start. I used half the specified ingredients
Heat oil in a medium wok or skillet.
Add carrots and sauté for 2 minutes,
then add onion, garlic and ginger
and continue to sauté for another 2 minutes.
Add bell peppers (capsicum), seasoning, and salt and pepper to taste (if it’s too dry add 1-2 tablespoons water), sauté for 2 minutes.
Lastly add zucchini (courgette) and balsamic vinegar; fry for two minutes until piping hot and just before serving add cilantro (coriander leaves) or parsley. Serve whilst still hot as a side.
The vegetables tasted very nice indeed.
Quick Stir Fried Vegetables
Preparation Time: 30 minutes; Cooking Time: 10 minutes; Serves: 4
Ingredients
- 1 tablespoon olive oil
- 3 medium Carrots in short juliennes
- 1 large onion cut in half moon slices
- 3 cloves garlic, crushed
- 1 teaspoon ginger, crushed
- 3 medium bell peppers (capsicum) (red, yellow and orange)
- ½ teaspoon chicken spice or your favourite seasoning
- ½ cube Aurora vegetable bouillon mix or any other of your choice
- Salt and pepper to taste
- 2 medium Zucchini (courgette)
- 1 tablespoon balsamic vinegar
- ½ cup coriander (cilantro), or parsley or just add your favourite herbs
Instructions

Points to Note:
- You can use vegetables of your choice, add seasoning of your choice and adjust to suite your palate.

Carrots are addictive. I used to dislike them sauteed in savory dishes but that’s changed now! This recipe has made me hungry…

Ohhh…any other time I would be ALL over this. OMG that looks awesome. But …. whilst the veggies are excellent for me … I have to watch whatever oils and such I take in at the moment…but that really DOES LOOK YUM!

I have been looking for zucchini for years. I tried to replace it with cucumber (when I was trying some recipes in the past) but it did not turn out good. I guess cucumber is too watery to grill or sautee.
Hey I can’t believe you can’t find Zucchini in Indonesia. I thought it’s grown all over the world. I also made a Zucchini cake which I’m going to post very soon. Zucchini can be found in some parts of Indonesia.Unfortunately, it is super rare in the province I live in. Cucumber, on the other hand is super cheap. It floods the market everyday.

I like the simplicity of a meal like this on a hot summer day. So many nice fresh vegetables and fruits available too. I guess you could also add any precooked meat if you felt you needed it as well?
