Old Fashioned Dijon Mustard

Dijon mustard is simply prepared mustard made of brown mustard seeds (Brassica juncea), white vinegar and/or white wine, preservative(s), usually citric acid, and seasoning(s). Turmeric is usually added enhance the colour of the prepared mustard. There are several brands and styles of Dijon mustard made by different companies. Canada is the world’s leading exporter of brown mustard seeds (Mustard Production for Alberta) .

What is Old Fashioned Dijon Mustard?

Old fashioned Dijon Mustard is coarsely ground prepared mustard with whole mustard seeds in it. If you compare it with other Dijon mustards, you’ll see that the others are usually very smooth in texture.

The President’s Choice Brand has the following ingredients: water, mustard seed, white vinegar, citric acid and turmeric. 1 tablespoon (45ml): has 15 calories, 195mg of salt and 0.9g of protein. There is no other nutritional value.

If you compare old fashioned Dijon with creamy style Dijon mustards, you’ll see that they are usually very smooth in texture, and the taste is also quite different. The smooth mustards have a hint of bitter flavour and the old fashioned has a milder taste. I personally prefer old fashioned, for cooking.
