Honey and Soy Chicken Drumsticks

This is one of my go-to-easy chicken recipes. I don’t like a lot of honey-just a hint. If you feel two teaspoons is too little then go ahead and adjust to suit your palate. The fresh ginger is the secret ingredient here. Please do not omit it.

Honey and Soy Chicken Drumsticks

Ingredients

  • 1kg (2.2Ib) drumsticks (about 8-10 pieces depending on size)
  • 4 clove garlics, crushed
  • 2 inch fresh ginger root, finely grated
  • 1-2 carrots cut into long slices 

Marinade Ingredients

  • 2 tablespoons soy sauce
  • 2  tablespoons oyster sauce
  • 2 teaspoons honey
  • 2 tablespoon canola or other vegetable oil
  • ½-1 teaspoon red chilli flakes
  • Salt to taste (depends on how salty your soy sauce is)

Instructions

  1. Preheat the oven to 375ºF (190ºC) ten minutes before using. Rub the drumsticks with the garlic and ginger.
  2. Mix all marinade ingredients in a shallow dish or container. Add the drumsticks and ensure they are fully coated with the marinade (dig in with your hands and ensure the marinade gets under the skin). Cover and set aside for at least 30 minutes or overnight in the fridge.
  3. Place the chicken on a lightly oiled roasting dish and roast 40-50 minutes or until cooked through and no longer pink. Serve garnished with sesame seeds and green onions.
