What is dried fenugreek leaves (Kasoori Methi)?

Fenugreek is a popular aromatic herb in the bean family (Leguminosae, Fabaceae), related to clover.

It’s a native to S. Europe and Asia but is now widely cultivated for its seeds and young leaves. The largest producer is India.

Fenugreek is used as a herb (the dried and fresh leaves),  vegetable (young leaves) and spice (the seeds)

Dried Fenugreek Leaves

The dried fenugreek leaves are used as an condiment in chicken, vegetable or fish dishes.

The dried  leaves are crushed and sprinkled over curries and non-juicy vegetable dishes just before serving to impart the unique aroma and flavour.

Dried crushed leaves can also be added to paratha or naan dough, before cooking.

You can find dried and packed Fenugreek leaves in your local Asian store along with other spices and herbs from India.
