I made it and served it with some tortilla chips and it was gone, in fifteen minutes. So good. Use good quality fresh Italian tomatoes. You’ll like it. I promise. Enjoy the week!
Heat the olive oil over medium high heat and add the onion, bell pepper, garlic and chilli flakes and cook over low heat for 5 minutes.
Add the red wine, tomatoes, sugar and enough salt to taste. Increase the heat and let simmer uncovered for 8 minutes. Cover, reduce heat and simmer another ten minutes. Add the dried thyme and set aside to cool. Adjust seasoning, stir in some olive oil and then serve with tortilla chips.
Red Wine and Thyme Tomato Salsa
Preparation time: 10 minutes, Cooking time: 30 minutes; Serves: 4
Ingredients
- 2-3 tablespoons extra virgin olive oil
- 1 medium onion finely chopped
- 1/3 cup finely chopped green bell pepper
- 1/2-1 teaspoon dried chilli flakes
- 1/4 cup good quality red wine
- 650g (1.5Ib) good quality Fresh Italian tomatoes, peeled and finely chopped
- ½ teaspoon sugar
- Salt and freshly ground black pepper to taste
- ½ teaspoon dried thyme, rubbed between fingers
