What is Salt Pork?

Salt pork is pork cured with salt or brine. It’s usually from the pork belly or sometimes, the back or sides. It looks like an uncut slab of bacon, has a lot of fat and is very salty.

Pork salt is used to flavour food during cooking so should be used sparingly.

How to Use Salt Pork

It’s typically boiled to reduce the salt and partially cook it, then fried until it renders fat and turns crisp. The rendered fat and crispy pork add flavour to your food.
