Slice tomatoes, longitudinally, in half
Mix all seasoning ingredients together
Place tomatoes, skin side down on a heavy baking sheet lined with parchment. Sprinkle evenly with the prepared seasoning and put in the pre-heated oven for 2 hours. Turn off the oven and leave them in for another 30 minutes with the oven door closed then another 30 minutes with the door ajar.
You can also place the prepared tomatoes in a sunny corner in the house and dry them for two days. Make sure there will be sunshine, two consecutive days.

Pack tomatoes in a clean sterile jar, covered with olive oil. Use within one week.

Ingredients
- 3 x 170g (6oz) punnets cherry tomatoes, washed, dried and sliced longitudinally in half
Seasoning
- 1 tablespoon sugar
- 1 teaspoon kashmiri chilli powder (or ½ teaspoon cayenne powder)
- 1 teaspoon coarse salt
- 2 teaspoons mixed dry herbs (oregano, thyme and rosemary)
Instructions
- Preheat the oven to 220ºF (105ºC) ten minutes before using.
- Lay the tomatoes on a heavy baking sheet lined with parchment, skin side down. Sprinkle evenly with the prepared seasoning and put in the pre-heated oven for 2 hours
- Turn off the oven and leave them in for another 30 minutes with the oven door closed then another 30 minutes with the door ajar. Remove and let them cool completely.
- The tomatoes should be semi-dried out but still soft. Do not over-dry them.
How to store
- Pack tomatoes in a clean sterile jar, covered with olive oil. Use within one week.
- Or pack in an airtight container lined with paper towels and put in the fridge. Use within one week.
How to use them
- You can blend the tomatoes and use as pizza sauce.
- You can use them in a making pizza or the tomato garlic basil bread.
- They are great for sandwiches. I have just had a sandwich. Yum!
