- Look for solid heavy heads of cabbage with no more than 3-4 loose outer leaves. Note that fall and winter cabbage heads are firmer and heavier than freshly picked cabbage sold in Spring to Summer.
- The outer leaves should be clean and crisp not limp, and free of discoloured veins or worm damage.
- The stem should be closely trimmed and healthy looking, not dry or split.
- Savoy types have looser heads and are lighter in weight.
- Don’t buy halved or quartered heads of cabbage. As soon as cabbage leaves are cut, the vegetable begins to lose vitamin C.
