  • Ingredients
  • 1 cup packed arugula
  • 1 cup packed parsley
  • 1 cup packed cilantro
  • 1/3 cup raw walnuts
  • 3 cloves garlic chopped
  • ½ small white onion chopped
  • ½ -1 teaspoon dried chilli flakes
  • 1 teaspoon kosher salt or to taste
  • 2 tablespoons lemon juice 
  • 2 teaspoons white wine vinegar
  • Grated rind (zest) of 1 medium lemon
  • 1 tablespoon honey
  • 4-6 tablespoons extra virgin olive oil

Arugula Cilantro Parsley Pesto with Walnuts

Preparation time: 20 minutes; Makes: 240ml (1 cup)

Ingredients

  • 1 cup packed arugula
  • 1 cup packed parsley
  • 1 cup packed cilantro
  • 1/3 cup raw walnuts
  • 3 cloves garlic chopped
  • ½ small white onion chopped
  • ½ -1 teaspoon dried chilli flakes
  • 1 teaspoon kosher salt or to taste
  • 2 tablespoons lemon juice
  • 2 teaspoons white wine vinegar
  • Grated rind (zest) of 1 medium lemon
  • 4-6 tablespoons extra virgin olive oil
  • 1 tablespoon honey

Instructions

  1. Place all ingredients in the bowl of a food processor and process till smooth. Check seasoning.
  2. Transfer to a small bowl and set aside.

    1. You can use any green veggie for pesto if you want. I do love arugula though. I don’t eat massive amounts though. It’s like eating blue cheese. A little goes a long way.
