My Favourite Pestos
This pesto can be used as a sandwich spread, for steak, with white rice or pasta.
- Ingredients
- 1 cup packed arugula
- 1 cup packed parsley
- 1 cup packed cilantro
- 1/3 cup raw walnuts
- 3 cloves garlic chopped
- ½ small white onion chopped
- ½ -1 teaspoon dried chilli flakes
- 1 teaspoon kosher salt or to taste
- 2 tablespoons lemon juice
- 2 teaspoons white wine vinegar
- Grated rind (zest) of 1 medium lemon
- 1 tablespoon honey
- 4-6 tablespoons extra virgin olive oil
Please always remember to assemble all ingredients before you start
Place all ingredients except olive oil in the bowl of a food processor
Slowly add olive oil and continue pulsing until smooth. Check seasoning.
Transfer to a small bowl and set aside.
Arugula Cilantro Parsley Pesto with Walnuts
Preparation time: 20 minutes; Makes: 240ml (1 cup)

Instructions

You can use any green veggie for pesto if you want. I do love arugula though. I don’t eat massive amounts though. It’s like eating blue cheese. A little goes a long way.
